Hey LC'ers!!

Here it is fresh off the presses...my delish Blueberry Spice Cake/Loaf.

I'm giving you the "double recipe" so that it will fit in your standard loaf pan. The half recipe ends up flat as heck and squished, but it is still enough to satisfy your dessert or special breakfast craving. I doubled the recipe and it is awesome...fits nicely. Doubled the carbs too per serving, but it is so low anyways so who cares! Just cut the doubled recipe thinner and you are SET!

Hockeygirl's LC Blueberry Spice Cake/Loaf

Pre-heat oven to 350 degrees.

Dry Ingredients:

1 1/2 cup soy flour
1/2 cup oat flour
2 tablespoons baking powder
1/2 cup Splenda (taste the batter beforehand and adjust amount if you'd like it sweeter)
2 pinches of salt
2 teaspoons cinnamon (to taste, if you like cinnamon, add a bit more, just taste your batter)
1/2 teaspoon cloves (cloves are STRONG so be careful on how much you add, you can omit it too if you want)
1/2 teaspoon ginger

Wet Ingredients:

1/2 cup softened butter (room temp works best!)
6 tablespoons olive or canola oil (I used olive but you can probably substitute canola or regular vegetable oil)
6 eggs (if you are concerned about cholesterol, add 3 eggs, and 3 egg whites instead)
1/2 cup heavy cream
1 1/2 cup frozen or fresh blueberries (I added frozen, it worked MARVELOUSLY)

Method

Combine wet ingredients (except for the blueberries) and mix until smooth. Sift dry ingredients and add gradually to wet ingredients. Mix with spoon or spatula until ingredients are totally combined. Do not overmix! Fold in blueberries. Pour better into greased loaf pan and level out. Bake in oven for approximately 45 minutes, check the loaf after about 30 minutes to see how it is doing, it is ready when you insert a toothpick and it comes out clean. Baking time varies with different ovens, but it does take a long time to bake... But it is WELL WORTH IT! Trust me on this one.

Total carbs = 88, carbs per serving 8.8 for a whole slice, 4.4 if you cut it in half.

ALternatives: you can also add chopped up apples, peaches.... dunno the carb count difference though.... Sorry.

Sounds good! I love my blueberries. I think it'll be a good thing for me to take to my friends for Thanksgiving.

Hey Rob!

Whoopsie! I used ground cloves. I may omit them next time because I added just too much and it was VERY spicy.... Not bad....but SPICY. The DH ate most of them cuz he's into spicy... Hehe.

The instuctions seem very long, but believe me, this thing can be whipped up in a jiffy!

The loaf sounds wonderful and I have frozen blueberries on hand, so I'd love to try it. I'm wondering what I can substitute for the soy flour as I don't eat soy. Maybe a mixture of vital wheat gluten and protein isolate?

Krystyne - sounds yummy!

Esther - I suggest replacing the soy (I don't care for soy either - I have read in a couple of places it slows down the thyroid and I'm not to excited about the taste) with 1/4 c vital wheat gluten and 1-1/4 c whey protein pwdr (either plain or vanilla would probably work - adjust sweetness if using vanilla). Adjust carb count. Personally I will use 1/4 c gluten, 1/2 c wheat bran and 3/4 c whey protein powder and see how it turns out. I usually like the variety of "flours." Also, I like getting the bran in my diet. No constipation or IBS here.
