| I just got a crock pot and am very excited to try it out... It will definately save me the hassle of cooking dinner for me and the BF when I get home from school (I am usually VERY tired by that time and grab small things to eat instead of an actual meal)... Does anyone have any crock pot recipes that they'd like to share??? Anyone try out any LC recipes lately, or have any experimental ideas? Thank you in advance! Cheers, Krystyne |

| Crockpot Meat Loaf 2 pounds ground beef 1 pound ground pork 2 eggs 3 tablespoons minced dried onions 2 tablespoons dried parsley flakes 2 tablespoons dried chives 1 1/2 teaspoons garlic salt 1 cup crushed pork rinds 8oz can tomato sauce 1/2 cup heavy cream 1/4 cup water Mix all ingredients together and form into a loaf. Place in Crockpot, I add vegetables like onions, frozen cauliflower, frozen broccoli, frozen yellow squash or what ever you like. Put the lid on, turn it on high, and let it cook for about 5 hours. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Roast Sticky Chicken 4 tsp. salt 2 tsp. paprika 1 tsp. cayenne pepper 1 tsp. onion powder 1 tsp. thyme 1 tsp. white pepper 1/2 tsp. garlic powder 1/2 tsp. black pepper 1 large roasting chicken 1 cup chopped onion In a small bowl, thoroughly combine all the spices. Remove giblets from chicken, clean the cavity well and pat dry with paper towels. Rub the spice mixture into the chicken, both inside and out, making sure it is evenly distributed and down deep into the skin and under the skin. Place in a resealable plastic bag, seal and refrigerate overnight. When ready to cook chicken put it in the Crockpot and do not add any liquid. As the cooking process goes on it will produce it's own juices. Cook on low 8 to 10 hours and it will be falling off the bone tender. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ General Chicken 4 LBS Boneless, skinless chicken thighs-0 1-2 Tbs. olive oil-0 1 teaspoon liquid Splenda-0 1/4 cup water-0 1/3 cup soy sauce (use a good quality 0 carb sauce)-0 4 Tbs. LC catchup-4 1-1/2 Tbs. Vinegar-1.5 1 clove Garlic finely chopped-1 1/2 Tsp. Red Pepper Flakes (the kind you put on pizza)-.5 1/4 Tsp. Ground Ginger-.3 Put everything in the Crockpot and cook on low for 6 hours or high for 4. Serve over cooked Dreamfield spaghetti. |

| LOL. I have a Crock Pot on my Christmas List, along with a LC Crock Pot Cookbook. Rest assured, when I try a good one, I'll let you know! PS -- Krystyne -- have you had any luck with LC pierogis? I have not made mine yet, but am just thinking I'll go ahead and make them the usual way and just eat one on Christmas Eve.

| Turkey breast!!! Put it in your pot with just a little water... no more than a cup...and let it cook. Start it early, and by dinner time it will be sooo tender! Never tasted turkey breast that tasted better.

| Krystyne - can't give you specific recipes because I am a "throw it in the pot and see how it comes out" type cook. But here are some ideas: Chicken vegies soup - place chicken parts in pot - add 1 c water, chopped garlic & onion, white wine (about 1/3 c), salt, pepper, rosemary, basil. Let simmer until chicken is very done. Pull chicken out and let cool a little - while chicken is cooling add any chopped vegies you like - cauliflower, mushrooms, summer squash, eggplant, carrots, celery, etc. Turn up heat and let vegies cook. Cut up chicken meat. When vegies are done add meat. You may need to add a little (and I do mean little - no more than 1 cup) water depending on how much broth there is . I like chunky soup with little broth - up to you. Adjust salt and pepper to taste. Beef soup - I cut up beef first into bite size peices and simmer with 2 c water, 1/4 c red wine, garlic and onion, salt, pepper and thyme or rosemary. Let simmer until beef is tender. Add any vegies I like and a little water if needed (beef usually doesn't make as much broth as chicken does so it may need a little). Add salt & pepper if needed, cook until vegies are tender. You may add 1 can cut up tomatoes - this make similary to minestrone soup - large can adds about 5 net carbs per 2 cup serving (2 cups fills me and is a complete meal). A small can will add about 3 net carbs. Pot Roast (will be doing this tomorrow): cut in big chuncks - put in 1/2 c water and 1/4 c red wine, garlic, onion, rosemary, salt & pepper. Simmer for hours, later when beef is nearly done I add carrots, celery, cauliflower and any other vegies I desire. Chicken cattatorie (spelling????): cut up chicken parts, 1/2 c water, 1/2 c white wine, little chopped onion, garlic, oregano & basil, salt & pepper. Simmer for 4 or 5 hours. When chicken is nearing done add can chuncky tomatoes, bell peppers, chuncky onion, chuncks of zucchini and mushrooms. Add LITTLE cayenne or dried hot chile pepper to taste - (I like it mildly spicy) Simmer until vegies are done. Can serve over spaghetti squash if you like. Enjoy! Karen

| well i am a crock pot tosser also toss in a pork roast or butt a little water just to wet the bottom of the pot cook it for 6 hours or more just check on it till it falls apart drain the juice off and add some l/c B-B-Q sauce we like the carb options let it cook on high for another hour we use l/c bread and Cole slaw with it is nice to have in the frig for a quick sandwich

| One I made recently that was so easy and so good - I had a chuck roast, which was tied. I untied it and cut off any big chunks of fat. Put it in the pot, sprinkled an envelope of onion soup mix (dry) over it (Carb Options now makes one, I used Lipton's) then poured a 12 oz. bottle of Miller Lite over THAT and cooked it on low about 10 hours. Boy was it GOOOOD!! If you look further through these recipe threads I also posted a "Cranberry Crockpot Chicken" recipe - once you have the cranberry sauce and Catalina dressing mixed up, it goes together very fast and is delicious. Another one I did a month or so ago was to take a London broil (bought it on sale cheap), browned it, put it in the crockpot and covered with a jar of LC marinara sauce. Cooked it til the meat fell apart, about 8 hours or so, shredded it and added it back to the sauce, then served over spaghetti squash with some Parmesan cheese on top. Easy and good!
