| This is sooo good! I don't have the carb count on it... but I am posting it with the changes I made... Fettuccine and Vegetable toss, with chicken 4 oz. pasta ( I used dreamfields spaghetti as a substitute) 2 cups fresh mushrooms ( I used two cans of mushrooms) 1/3 cup finely chopped onion 1 clove garlic 1 Tablespoon olive oil 1/2 med zucchini, halved and sliced in thin slices 1/2 med. yellow squash.. halved and sliced thin 1/2 cup sun dried tomatoes...(it called for the ones in oil but I didn't' have those..if you use them.. drain them) 1 tsp. Italian seasoning salt, to taste Parmesan cheese, optional Cook enough chicken to make 1 1/2 cups cubed cooked chicken, sprinkle with a small amount of lemon pepper before cooking. Cook pasta In a large skillet cook mushrooms, onion, and garlic in hot olive oil, til veggies are crisp tender. Add squash, sun dried tomatoes, and seasoning. cook and sir til squash is crisp tender. Add the cooked chicken and heat through. Toss gently til mixed. Add to pasta, and sprinkle with Parmesan cheese if desired. Makes 4 servings...
