I would say 1/2 cup would work for 2 people. You don't really need much of the final glaze. Just enough for some color and flavor. This isn't like gravy where you pour 1 cup over your whole plate

Sorry I didn't see this earlier!

Char -

Thanks so much for mentioning the juice. I've seen that POM stuff before but always thought it was sugar added! So, I never even looked twice at it. Very cool. I'll never mess with the seeds again

Marcie, the one I buy at Trader's is their brand, all natural pasteurized, "Just Pomegranate" 100% Juice" - it's not refrigerated and is kept with all their other bottled juices. It's 32 oz. for $3.99 - so I should bother squeezing and straining the seeds?! I think NOT! LOL!!

We keep this stuff around at all times - I drink 2 oz. of it a day as I read that it's good for your carotid arteries - shrug - who knows - but I do like the taste of it and will try it in your glaze. I'm thinking that would be good also over a nice panroasted pork tenderloin!

It would be great with pork. I'll look for the TJ's brand next time. That's cheap!

I know. The same size bottle at Whole Paycheck - uh, I mean Whole Foods - is $7.99!

Gotta love TJ's. I just bought 6 more bottles this morning!

Char - thanks for the heads up on the TJ pom juice - the stuff in the regular market is really expensive!!

Marcie - great recipe - love the idea of trying it on pork too!
