Everyone, I'm new to this website although I've browsed many times, but I've been diabetic II for 4 years and have essentially cured myself, having maintained perfect low normal blood glucose readings for the entire time because of a low 60 "good only" carb per day diet. I have also lost 40 pounds, and I believe strongly that my diagnosis made me a much healthier person. My blood fats are low normal from a way out of whack level. I'm not a salesman and have no vested interest in anything but sharing my excitement to have a FREE NOODLE. Yes, these things are amazing. Here's what happened.
I have hated every very low carb pasta on the market, probably, like many of you. but I did some digging on the internet a few weeks ago to look for asian noodles that may be lower carb to use in soup (I expected to fail) and to my amazement found a few posts describing Shiritaki noodles, these zero carb Japanese noodles made entirely of soluble fiber derived from a root plant. They are sold packed in water in the refrigerator section of 4/7 asian markets i visited here in Austin Texas.
Anyway, I tried them in spaghetti. first I drained them, simmered them in chicken stock, and made a quick red sauce. They were excellent, with no flavor of their own, they absorb very well the flavors of the dish. It was delicious, and they had a naturally al dente texture far superior in flavor and texture to any other low carb pasta I have tried.
I have since used them for vietnamese soup, tuna noodle casserole, thai chicken and basil stir fry noodles, etc. They will change your kitchen and reinvigorate you diet. Best of all, aside from their taste, they are soluble fiber filled, and help reduce postprandial glucose, reduce lipid absorption, everything that we know soluble fiber is good for.
Shiritaki, or Konnyaku noodles.
Here's a website with tons of recipes. http://www.konjacfoods.com/recipe/index.htm
On that website you will notice if you dig around long enough that you can buy the powdered fiber, and mix with water, and shape it into anything. bricks, pasta, etc. This stuff fries up nicely too and can be browned.
