Who has tried Shiritaki or Konnyaku or Yam noodles?

I found them last week in an oriental market. However, they only had them with tofu, or with seaweed. I fixed a pork stirfry using the ones with seaweed. They worked ok. The market also had a 5 inch x 2 & 1/2 inch x 1 inch block of white konjac which I also bought to try. You slice the block in 1/4 inch slices and cook with whatever. It is flavorless and is suppossed to be used to give "texture" to a dish. I was hopeful that it would work and I could use cubes of it it various dishes like mac & cheese or "potato" soup. However, the texture is more like a very al dente jello (think soft gummy bear). If I can think of something that might be compatible with a texture like that, I may try it again. As for the seeweed noodles, I would use them again in an oriental stirfry, but probably not anything else.

I haven't figured out anything to do with the konnyaku. It's just too chewy. I do like the noodles, though. They make good spaghetti, pad thai, or anything you'd use Asian noodles for.

okay,.. NOW i am confused (those of you saying that i STAY that way can sit down now)
what is the DIFFERENCE between the noodles and the konnyaku.,, i thought the konnyaku WAS noodles....

Konnyaku is the yam, konnyaku noodles is the yam already cut into noodle shapes. I believe you can get it in different shapes but I have only come acorss noodles. I suppose if you can manage to buy a block o konnyaku you could cut it into whatever shapes you wanted to, especially if you have a pasta cutter.

I am on a serious hunt for these noodles. We dont have a Whole Foods here. Wild Oats doesn't have them. They have noodles that have yam as one of the ingredients. Im heading over to check out a Low Carb store tomorrow.

Does anyone have any suggestions as to other places to look...

Local Asian stores! And don't bother asking if you go to a store that is anything like mine they haven't got a clue as they don't speak much English!

GG, the only thing I could suggest is to look in an oriental speciality market. That is where I found mine. Good luck.

Yeah, they don't have stores in every state but a there are a few.

I'm lucky out here as they started in CA so I have 3 within 40 miles.

We get lots of great things there including king oyster mushrooms, ****-takes (cheap), green tea, FRESH water chestnuts (OMG they're so good), sea bass for $4 less a pound than the store (when and if they have it), soy sauce, sesame oil, peanut oil, etc. Lots of great ingredients for Asian cooking.

Murakai market (theres quite a few thruout) in Gardena is another great place to shop for asian foods.
Do you live close to ventura county - thats where i am?

Thank you Marcie for the article that inspired me to try these noodles. They are FAB! I have tried several different brands and they all have been excellent. I don't smell the "fishy" odor after rinsing but then again I don't really smell it when I open the bag either. I guess my nose is not working. LOL
These have been a godsend to my renewed LC journey. Excellent in stir-fry, as a sub for pasta in Alfredo and I am looking forward to trying them in Chicken Noodle (not) Soup.
Thanks again for letting me know how to rinse and cook them.
