| I scrounged my fridge last night and did this, it was really good. try it. 4 chicken breasts, pounded evenly thin between saran wrap 2 cups ricotta 8 slices pancetta 1/4 cup Pecorino Romano, grated 3 TBSP sage 3/4 cup white wine 1/4 cup chicken stock 3-4 TBSP olive oil 3 cloves garlic preheat oven and a baking dish to 350 F, preheat a dry fry pan to med. high mix 2 TBSP sage with cheeses. on each breast spread a thin even layer of cheese. lay two slices pancetta on that. spread pancetta again with cheese. roll and toothpick to seal. add olive oil to pan to coat, add chicken and garlic together, brown on all sides evenly. remove pan from heat and transfer chickens to baking dish. Bake them for 10 min. Put frypan back on med. heat and add wine and stock and 1TBSP sage to deglaze. Stir constantly and reduce to the consistency you like, at least reduce by 1/2. Season at the end of reduction with salt / pepper to taste. Plate the chickens, pouring sauce over them. enjoy !! Ted

| No, I just know that it's extremely low. Probably 5 or less per serving. Ricotta is pretty low carb. I think 2g per serving, and each breast has likely less than a serving. the other incredients are almost no carb. TEd

| Sounds wonderful, Ted. I make something similar, but also use some chopped (cooked, or frozen thawed & squeezed to get the extra water out) spinach into the roll.

| a simular recipe was on low carb n lovein it... but useing bacon and and spinich... it sounds realy yummy..
