cream question

"Low Carb Cooking" at Low Carb Diet Support: "In Canada we have half and half, light cream, creamo and canned evaporated milk. Does anyone know what would be the closest to "heavy cream". I'd love it if evaporated milk was close cause I ...."

Question cream question

In Canada we have half and half, light cream, creamo and canned evaporated milk. Does anyone know what would be the closest to "heavy cream". I'd love it if evaporated milk was close cause I find myself throwing out the cartons before I use them all. Canned milk comes in tiny cans here.

Donna, what do you use to make whipped cream? That's what heavy cream is used for. I wouldn't think that evap milk was close, but that is my opinon, however. What is Creamo?

We can buy what is just called whipped cream that is in a liquid form, but I think it's a little sweeter than just plain cream. I'm not sure if there is anything else in creamo, but it's what people usually put in their coffee.

Evaporated milk is not the same. I haven't a clue what creamo is.

Do you have whipping cream--not to be confused with already "whipped" cream? Whipping cream and heavy cream are the same thing.

Half and half has less calories and fat than whipping cream, but it also has 1g carb per Tablespoon that whipping cream doesn't have. Nothing called "light cream" in the store where I shop. I always assumed people meant half and half, but if your store sells both then probably not.

Depending on the use, I'd probably use half and half and count the carbs. Then again, check the nutritional info on the light cream. Maybe it has more fat and fewer carbs than half and half, which would make it more like whipping cream.

I just read what you posted about the liquid whipping cream being "sweeter". If it's sweetened, then you don't want to use it! Here in the U.S. whipping cream doesn't have added sugar. Check the label.

Light cream is between heavy cream and half & half in density. At my local grocery it is usually sold as "table cream". Half & half is higher in carbs because it is half cream and half milk and is 10.5-18% fat. Light cream is 18-30% fat and heavy (whipping) cream is 36% fat.

Thank you everyone. I knew I could get an answer here. Next time I'm in the store, I'm going to read the ingredients on the whipping cream and see if there is sugar in it. I know I don't want that.

When I'm in Canada, I find heavy cream is identified by percentage of butter fat. I seem to remember that it's even more than 36%, but don't remember the exact number.

Oops! Thanks, Maggie, I meant to post that heavy cream is 36% or higher in fat content but was in a hurry and got sloppy. It would be great if our dairy packaging would list the fat percentage, too.
