Default Cauliflower Bisque

This is another one of LindaSue's recipes. I made this for supper last night and it was absolute heaven. I used the leeks instead of onions and I don't have a stick blender so I put mine through the regular blender. I didn't have any homemade chicken broth so I used canned, it was really good.

Editing to add:
I was not fond of the added parsley at the end. I think that next time I'll cook my parsley in with the leeks and celery. I ended up straining the parsley out of the soup.


CAULIFLOWER BISQUE

1 small cauliflower, cut into small chunks, about 20 ounces after trimming
1 small onion, diced or leeks, chopped, 2 1/2 ounces
2 tablespoons celery, finely chopped
2 tablespoons butter
3 cups chicken broth (homemade recommended)
1/2 cup heavy cream
Salt and pepper, to taste
2 tablespoons fresh parsley, finely chopped (dried not recommended)

In a 3-quart saucepan, saut? onion or leek and celery in the butter until tender. Add chopped cauliflower, a bit of salt and pepper and broth; bring to boil. Turn down heat to low; cover and simmer until cauliflower is very tender, about 20-25 minutes. Use a stick blender to puree the soup until completely smooth and thick. Add cream; mix well. Add salt and pepper, if needed. Stir in the parsley and serve.

Makes about 6 cups soup, or 6 big servings
Can be frozen

Per Serving: 150 Calories; 12g Fat; 5g Protein; 6g Carbohydrate; 3g Dietary Fiber; 3g Net Carbs

This reminded me of the Leek and Potato Soup that I'd eaten several times while in England and is one of my favorite soups. You could also add some canned clams with the juice and crumbled bacon and have clam chowder.

Ummmm! I have got to try this! I have some cream I need to use up, and I'm going shopping this afternoon, so I'll pick up some heads of cauliflower and leeks.

Do you think the parsley is just a garnish? I have flat leaf parsley growing wild ("volunteering") by the side of my house.

You know, I rarely ate cauliflower before adopting this woe. Although I didn't dislike it, I just never knew how to make it tasty. It's such a wonderful and versatile vegetable. Thanks for another great recipe, Betty.

Wild flat leaf would be great!

I'm not much on the curly stuff myself, I think it's too bitter. Italian parsley is much better.

Yes the parsley was just a garnish. All I could find was the curly and MarcieLynn is right it's way too bitter. I'll have to look for some of the flat leaf.

This soup has such a good flavor, I bet it would make a killer base for broccoli cheese soup as well as clam chowder.

I've got all of this at home right now. Cool! I won't make homemade chicken broth but I have some great organic stuff. I will make it and let you know what I think.

This is a keeper, Char! I am just like Teel - I NEVER ate cauliflower before lc-ing. Just finished the last of my "Just Like Stuffed Baked Potatoes" cheesy cauli dish last night. So time for more Cauli!

And the trouble with parsley (Italian or otherwise) is that you have to buy so much of it! I always throw out half of it. I think I will have to start growing some of this stuff!

I made this again last night, when it was done I cooked a bag of frozen broccoli in the microwave and stirred that in along with some cheese. It made really good broccoli cheese soup.

I made this a few nights ago, too. It was very thick (like a porridge), so I added another cup of chicken broth and it was really quite delicious. I added cubed chicken and a green salad and we called it dinner.

Yes, mine is very thick also, but that's what I like about it. It reminded me of the potato-leek soup I used to have that I loved so much.

The last time I made this soup I thought I'd have leftovers for lunch but people kept dropping by that day and I ended up feeding several friends and family members and they ate all my soup.

So Friday my husband was planning to leave to go hunting with his brother so I thought I'd pop a couple of chickens in the oven and make a double recipe of soup and have plenty to food to stock up my refrigerator. Well my husband and his brother didn't get off on time and my twin daughters and their boyfriends stopped by. Buy the time everyone left I had one cup of soup, a half a chicken breast, one chicken leg and a little salad left.

They ate all my cheesecake and the last of my chocolate pound cake. Non of these people do low carb, but the fact that they love to come to my house and eat up all my food I think is a wonderful testament to this way of eating.

I think anyone who says that low carb is unhealthy, hard, boring or hard to stick to isn't really trying. Several of the friends that have come to my house and eaten my low carb food have warned me about not doing the Atkins diet because is is so unhealthy. In the beginning I'd try to explain to them that they had the wrong idea about the diet but they either weren't listening or didn't want to hear it. So I just gave up and now I just say I'm eating healthy and staying away from processed food. No one argues with that.

I'm really sorry about this long off topic rant, but I just had to vent. A woman at the grocery store made me really mad this morning. We were standing in the check out line and she looks at what I have in my basket and starts going off on me about “your doing that Atkins diet.” I'm quit sure I don't need to tell you the rest of the conversation as all of you have heard it before. I think what makes me the maddest is that I didn't have the back bone to tell her to mind her own business and kiss my a**.

Betty - how bad can it be when your friends and family are eating you out of house and home, LOL!

And, as for the rude woman in the grocery store, I'd most likely have done the same thing. I'm pretty non-confrontational with strangers both by nature and out of caution. Geez, you never know how someone's gonna go off on you if you get smart alecky back. Who needs it?

This is the best addition to my cauli repitoire (siq)! I LOVED this. I will DEFINITELY double the recipe to freeze some for later. I'm really the only one who likes cauliflower and my 6 y/o hasn't tried this concotion yet because he's not home from his cousins house yet. My bf won't eat it because I put bacon in it and he's not a cauli eater. So I'm lucky that I kinda have this one to myself! THANKS SOOOOO much for posting this!
