Oatmeal??

"Low Carb Cooking" at Low Carb Diet Support: "I've made several batches of the Peanut Butter Fudge that Char posted (on page one) in the thread titled "What's your favorite LC dessert recipe???" The taste and texture remind me of those chocolate/oatmeal "No-Bake" ...."

Question Oatmeal??

I've made several batches of the Peanut Butter Fudge that Char posted (on page one) in the thread titled "What's your favorite LC dessert recipe???"

The taste and texture remind me of those chocolate/oatmeal "No-Bake" cookies I used to make years ago. I thought it would be good to make a double batch and add some oatmeal. I'm sure they would still "set up" fine. The fudge hardens as it cools, and has a nice creamy texture.

The problem? I researched oatmeal carb counts at Quakeroatmeal.com and I was flabbergasted! Even after deducting the fiber count (which wasn't as much as I thought it would be) the carb counts are huge!

I've read where a few of our members are eating oatmeal on their meal plan. How is this possible, unless they're eating a tablespoon at a time, or eating only plain oatmeal? (The "Women's" Formula has brown sugar, sugar, and molasses in it!)

I just wondered if anyone knew of some type of ingredient, like oatmeal I could add to these cookies for bulk and fiber. No wheat, please....I've found that I'm wheat sensitive. Thanks!

Maxi, I just checked my Diet Power for Oatmeal and all it really listed was Quaker. But I did a Google search for Steel Cut Oats and came up with McCanns Irish Oatmeal at Netrition with 22 grams carb (less the fiber) for 1/4 cup.

Not a great idea but the first one off the top of my head is flax.

Flax would be my first choice, too.

Yeah, it's interesting how some people seem able to eat oatmeal. I can't. It makes my BGL go up way to fast and way too much.

Some low carb plans include a much higher portion of carbs than Atkins. I think the Zone has something like 30% or 40% of calories from carbs. So, people on plans with higher carb allowances could probably work in a little oatmeal.

You can buy oat bran or oat fiber. That might be useful to replace the oatmeal without increasing the carbs, too much.

Polydextrose is a fiber that is being used in both low fat and low carb recipes to provide fiber and bulk. It's also holds moisture, so it provides a nicer texture in the absences of much starch or fats. I've been experimenting with it this week. So far, I'm impressed. My peanutbutter cookies were chewier and BettyR's mousse was lovely.

Flax, huh? Interesting....isn't it a seed? I love sunflower seeds. Cookies made with them would be quite crunchy and calorie dense!

My Kroger has a section of Bob's Red Mill products....seems like I saw some flaxseed meal??? there, or maybe it was just my Almond Meal. Now, there's a thought: I could add some Almond Meal and some walnuts (I could even sneak in a little fiber powder)to bulk it up to cookie form.

I've got to go grocery shopping this evening (I'm out of fresh veggies!) so I will scope out the flax among other things in the "health food" section.

I follow the Zone plan and I do eat oatmeal. Not the instant garbage that's over processed and full of junk though. I do the old fashion(organic) kind that requires cooking forever(it seems) LOL.

The type of cookie you are talking about has been reworked into LC by Sharron and is in her new cookbook; it's called a no bake cookie and yes, one of the ingredients is flax.
Perhaps you could PM Sharron and she would email it to you? Those cookies are
soooooo good...but watch out....they are addicting

I add oatmeal in on days when i know i need the extra carbs.. beacuse of working out alot .. and doing snow shouvleing.. other wise im dead come afternoon.. no energy..it proly dont help me w/ looseing right now.. but sometimes i need the extra energy to burn.. its mainly a Your Milage may vary

I eat it almost every morning right now--I am doing my own thing right now...need to get back to a more Atkins looking diet...but sothng ws making much difference so I eat it...no negative effects so far...and yeah--it seems to take a LONG time to cook in the morning, but it tastes soo good! I am still well under 100 carbs most days...the odd bad day is well, just that...but most days are around 60-70. including about 18 for oatmeal in the morning.

I have seen this recipe in several places and it sounds like just the ticket to me! I'm not at the point of eating oatmeal though, but maybe those of you who ARE might want to give this a try. I got it from another website, not sure where....

"Crockpot Oatmeal

Tip for oatmeal: make it in the crockpot overnight! It comes out very
creamy from the slow cooking, and I love being able to get up and have
that hot steamy bowl right away without having to do anything at all.
You do have to clean up the crockpot, but you can make a large
quantity and refrigerate the leftovers to be heated in the microwave
for the next several days. I use two cups of oatmeal at a time, which
is enough for four breakfasts (for me, anyway; probably more for
people who don't have huge bowls like I do). Here's all I do:

2 cups old-fashioned rolled oats (I get this in bulk from my food
co-op--if you used the quick cooking ones, it might be even creamier)
6 cups water--I think you need more than usual because of the long
cooking time
cinnamon to taste, I think I use about 1/2 teaspoon

You can add other flavorings as you like, such as dried fruits, other
sweet spices, diced apples, etc. I usually put raisins on after it's
cooked because I like them chewy. I've been meaning to try dried
cranberries.

Put it in the crockpot, turn on to low, and go to bed thinking about what a
great breakfast you're going to have!

I scoop it out of the crockpot and eat with maple syrup, or blueberry syrup,
or pourable fruit, and soy milk--yum! To reheat leftovers, I usually add a
little water, and stir it a couple of times while microwaving until it's hot."

Of course sugar is out and for most of us probably raisins and other dried fruit is out too, but no reason you couldn't eat it with DaVinci syrup, SF maple syrup, butter, heavy cream, Carb Countdown milk...whatever you like. Fresh blueberries would be really good too!

Oatmeal doesn't fit in very well with Atkins since it's a ketogenic diet and ketosis rarely occurs after 50 net carbs. I sometimes add a tbs of oat bran to "Maggie's cereal" to give it a bit of oat taste, though. I intend to add back oatmeal as soon as I begin pre-maintenance after I lose another 19 pounds.

i buy the rolled oats "oldfashion" oat meal.. not that instant stuff... im thinking it calls for 5 min cooking time.. i maby cook it for 2.. i like chewy oatmeal.. i topp it w/ a tiny amount of brown suggar substitue, and liquid sweetner a drizel of LC milk and yumm.. i usualy let my oat meal sit befor eating it.. (befor adding milk.) habit i picked up as a child my dad would make a big pan of oatmeal and we would eat from it proly 40 min later.. just by heating in microwave.. it was one big solid mass but that is how i liked it then.. still do but w/ old fashion oats hardly cooked you dont get that textur at all!

I do like the almond flour porage kinda like cream of wheat. But i had a bad bowl one morning (either due to rancid almond flour or a bad egg never figured out wich) and dont think i could stomach it agin for a long time!

I bought some flax seed meal last night...they were out of one kind. I got brown, ground flax seed, I think. Let the experiments begin!

Well, technically, both flax meal and bran are "grain products" and not on the list of induction foods. On the other hand, the main thing this cereal does is satisfy and keep one regular, so I imagine it may not be the worst thing ... but I only recommend it for OWL.

I'm going to be getting some oat fiber (whatever that turns out to be ) soon and I'm going to try to tweak the recipe by replacing the miller's bran with oat fiber. With any luck it will actually reduce the carb count AND taste even more like oatmeal. We'll see.
