Thumbs up Wings surprise.

So, I was broiling up a few chicken wings. I'm talking fresh and whole, not the little wing pieces that come frozen. I like the last little part that the frozen ones leave out. When they get crispy they're fun to crunch on the ends. Well, that's just me, and it's irrelevant to the issue here.

So I was thinking that I'd have my usual hot wings with blue cheese dipping sauce & celery. Then I had an idea while they were cooking. I put some of my Frank's Red Hot into a pyrex measuring cup, added a couple of squirts of pineapple DaVinci syrup and the juice of about a half a lime. It tasted great, so I added some thick'n'thin NotStarch and nuked it a bit until it was a dipping sauce consistency. This made a fantastic dipping sauce for the wings.

I'm thinking that the next time - if I plan ahead - I'll skip the thickener and marinate the suckers in this brew overnight before cooking ... and maybe baste along the way.

Really tasty.

Maggie, I like the wing tips as well. They do make a nice crunch. I'm going to have to give this a try in the very near future. Thanks for the idea.

Maggie, if you can find it, try the Frank's Chile Lime hot sauce - it's dy-no-mite! I don't even buy anything else these days.

Adding the pineapple DV is an interesting idea though!

What I do is sprinkle the wings with my "goes on everything" seasoning - basically it's just garlic salt, onion powder, crushed dried oregano, and chipotle chile powder - on the wings, then bake at 450* til they're getting browned and crispy. Then I melt a couple tablespoons of coconut oil and mix in about half a cup of the Chile Lime sauce. I brush that over all the wings and then back into the oven for another 10 to 15 minutes, til they're REALLY getting bubbly and crispy. Then I have the celery sticks with the bleu cheese dressing, the wings are too good as is to dunk 'em!

We have that every Thursday night for dinner. Me, the Queen of NO REPEAT MEALS, and I've never gotten tired of it yet!

Maggie-
I know what you mean about the wing tips, I love them.

That sounds wonderful, I'll have to give it a try. I've been craving some chicken wings for several days now but just haven't made them. I'll be making some tomorrow.

It's so funny, when I was a kid we used to go to the store and buy chicken wings and chicken necks and use them to go crabbing with.

We're about 10 miles from Galveston Bay. We'd take our crab nets and some string, tie the necks and wings onto a sting and then tie them off to the railing of one of the fishing piers. One person could watch about 6 to 8 strings. When you see the strings moving you pull it up slowly until you could see the crab then you would scoop the crab up with your crab net and toss it in an ice chest.

We'd go early in the morning before it got too hot. Between 9 and 10 o'clock it would be starting to get hot and we'd usually have filled up our cooler with crabs so we'd leave to go home. Then we'd spend the rest of the day boiling, cleaning and eating crabs. We had a lot of fun for the price of a package of chicken necks and wings.

At that time I never thought that anyone actually ate chicken wings, I thought they were used to catch crabs with and that was that.

You're right, Kim, they're smoked jalapenos. I LOVE chipotle Tabasco.
Maggie, that recipe sounds terrific; I'm gonna have to get some pineapple syrup and try it. (I like the crunchy end parts, too!) :cook:
I agree with Char on the Frank's Chile Lime sauce...I didn't think they could improve on my old favorite Frank's, but, YUM!! I marinate chicken breasts in it, and grill them, and then top with monterey jack cheese. Oh, baby!!

Wow, I haven't seen the Chile Lime sauce, but I'll be watching for it! The regular Franks is a staple in my house.

I only had a notion that these flavors would go together. For me it was a nice surprise. I still love to cook and eat. I think that's why this way of eating agrees with me. I'm never bored.

I've never been crabbing, Betty, but I'm sure I'd enjoy it. I wouldn't mind trading a few wings for some crabs. Another favorite food!

Stephen, to further expound on the chipotle! LOL! It's pronounced "chee-POTE-lay" and it is some FINE stuff. You can buy it canned in adobo sauce (MIGHTY hot stuff), powdered as in chipotle chile powder (note the difference between CHILE and CHILI powder - CHILE powder is made from chiles only. CHILI powder is chiles AND other ingredients such as powdered oregano, garlic, etc. - check out the ingredients listing to make sure there isn't any sugar though.

And then there is Chipotle Tabasco sauce - man that stuff is SO GOOD that I put it on or in almost everything that isn't sweet! LOL! Worth looking for.

Maggie, if your markets don't care the Chile Lime Frank's, ask them to get some - it is really deeeee-vine!

I just wrote "Frank's" on my grocery list. The regular Frank's Red Hot is my #1 "plain" hot sauce, so I'm dying to try the chile lime (Tabasco Chipotle is BY FAR my #1 "flavored" hot sauce).

I'm also going to try making aloo gobi (Indian-style cauliflower) this weekend. Wish me luck!
