| I made the coffee cake, it's wonderful! I flavored my cream cheese filling with vanilla and cinnamon. Everyone really liked it, by the time everyone got a taste it was half gone. This is a real keeper. The pasty is really good, several people have suggested that it would make a good pasty for pizza pockets or a Chicken Broccoli Braid filling and I have to agree. |

| Betty - I am going to try this one! It looks divine! I like the idea of flavoring the filling, sounds great! Looks like something you could serve to non-lc friends who would not realize they were eating a lc treat! |

| Thanks, Dragonmom. My questions are exactly the same as yours. Those photos look yummy! I think I'm going to have to add lowcarb friends to my list of places to visit. I'm just afraid that all the great recipes and photos will cause uncontrollable cravings!

| This is Carbquik, it's a low carb replacement for Bisquick. http://www9.netrition.com/tova_carbquik_page.html Here is a 40 page thread about it if you would like to read it. I read the whole thing before I purchased it and I've been very pleased with the product. It's not a perfect replacement for white flour and it takes a bit of getting used to, but it's the best low carb bake mix I've tried so far. | Thanks Betty, I have read almost half of that thread, and thought it really looked promising. There sure are alot of prolific bakers out there! I'll try to finish it today and make my decision on whether to try it. I like to get Maggie's opinion on new things as she tests her blood sugars in a very scientific way. (Hint, Hint, Maggie if you see this!). I know there are things out there that look really good, but turn out not to be. The pics certainly make this tempting! |

| Yeah, I've been thinking on it. I was a little put off by the ingredient list which is slightly different for the different sizes. The 1lb size has some "partially hydrogenated" soy oil in it, but the 3 lb package replaces that with palm oil - which is much more acceptable to me. Also, the ingredients in the "carbalose" are slightly different from one size package to the other. Nevertheless, if the nutritionals are correct, whatever these strange items are, they seem to add up to something acceptble in the three pound version. I just shopped for the month, so I'll probably pick some up next time I order. I'll report in when I get around to checking it out.

| Good eye, Maggie. I saw the different sizes and the different nutritional values for the bisquits and chalked it up them changing the recipe to make it fit an equal number of servings per box. I would think it would be easier for them to use the same ingredients in the carbalose flour and the rest of product...no matter what the size of the box. That is so odd. I think I might pick up a box...just to add to my collection of rarely used non-grocery store items. It seems that with each low-carb cookbook I pick up (I have three) there's a new list of items in the recipes that I've never heard of. I wish more of the recipes would use standard, easy to find ingredients. Carbquick sounds like just the thing to catch on and one day make it into the mainstream grocery chains.

| Maggie and all, I just finished reading the entire 40 page thread on this topic, and the manufacturer rep said that the difference in the two sizes is due to a reformulation that has been made. I guess since the 1 pd boxes were the first to be made, and packaging changes take alot of time (and expense) they were using up the boxes on hand before the next order of boxes with the correct facts were printed. | Here is the recipe, it's really easy. I made another one this morning and patted some frozen blueberries down into the sweetened cream cheese filling after it was on the dough. I sprinkled it with cinnamon Splenda and then finished as usual. It was really good!!! I think blueberry is my favorite so far. Cream Cheese Coffee Cake Posted by Over50Mom DOUGH: 3 ounces cream cheese 1/4 cup cold unsalted butter, cut into small pieces 2 cups Carbquik 1/8 cup Splenda (I used liquid Splenda) 1/3 cup Carb Countdown milk (I used 2 %) TOPPING: 2 tablespoons Splenda Granular (liquid Splenda won't work here) 1/2 teaspoon cinnamon CREAM CHEESE FILLING 8 ounces cream cheese, softened 1/2 cup Splenda (I used liquid Splenda) 2 teaspoons lemon juice Heat oven to 425 degrees. Cut a piece of parchment paper to fit a standard size cookie sheet. Cut the cream cheese and butter into the Carbquik. Mix in Splenda (or if using liquid Splenda, mix it with the milk). Stir in milk. Turn dough onto surface well dusted with Carbquik; roll in Carbquik to coat. Knead 8 to 10 times. Put dough on parchment paper and roll dough into rectangle, 12x8 inches. Place parchment paper on cookie sheet. Spread cream cheese filling (see directions below) down center of rectangle. Make cuts 2 1/2" long at 1-inch intervals on 12-inch sides of rectangle. Fold strips over filling, overlapping strips. Mix Splenda and cinnamon; sprinkle over top. Bake 12 to 15 minutes or until golden; cool 10 minutes. Carefully place on wire rack; cool completely. Refrigerate any remaining coffee cake. CREAM CHEESE FILLING: Whisk all ingredients together until very smooth. With Splenda granular: 225 calories; 20g fat; 7g protein; 15g carbohydrates; 9g dietary fiber; 47mg cholesterol; 100mg sodium. 6 net carbs per serving With liquid Splenda: 218 calories; 20g fat; 7g protein;13g carbohydrates; 9g dietary fiber; 47mg cholesterol; 100mg sodium. 4 net carbs per serving |
