    Default Has anyone got a recipe for Chicken Curry?

    Hi all,

    I'm at the end of my second week on OWL. I need a recipe for Chicken Curry, without the Rice i suppose

    My husband will be execting my usual recipe curry so the lowcarb one will have to be tasty

    Here is my usual recipe prior to Atkins, can you help me substitute?

    Chicken.
    Onions.
    Apple.
    Chicken Stock made from cubes.
    Hot Curry Powder.
    Couple Tbs Hot Spicey Chutney.
    Flour to thicken.
    Combine everything on frying pan then cook in oven for couple hours.

    Is it at all possible to get a simular Curry lowcarb?

    The flour is the main problem.


    Chicken - fine
    Onions - a little high in carbs but OK
    Apple - ditto
    Chicken Stock made from cubes - fine
    Hot Curry Powder - fine
    Couple Tbs Hot Spicey Chutney - may a little high in carbs, perhaps 1 T only?

    Obviously, flour is NOT low carb. How much do you use? You might try a little xanthan gum or Thick N Thin Not Starch (if you have any).

    Or, you could try to add a little reduced cream or yogurt to thicken.

    Instead of rice, cook up some cauliflower florets and pour the curry over that.

    I've never used flour in my curry. Have you tried making curry with coconut milk? I also put a bit of peanut butter in mine, too.

    Yes, peanut butter! Great idea. DH puts PB in alot of things where you wouldn't expect it and it really makes a nice flavor.

    Marcie, i never thought about the cauliflower! good idea.

    I think i will have to thicken it with cream or yogurt, i normally use about two Tbs flour to thicken, my recipe makes four servings.

    I'm happy i can still have my curry, not haveing rice won't bother me

    Thanks for the recipe link LCandrea, iv'e just had a look and it looks delicious.

    I made my Curry today and have to say it was scrumptious, strange though, it had a far better flavour than when i cooked it prior to Atkins, the only thing i left out was flour for thickening instead i used arrowroot as suggested by Karen, thank you Karen.

    Next time i will try the recipe here.

    I too love curry, and usually do a chicken/veggie/curry stew...
    basically just some onions, celery, carrots (either shredded or those little baby ones cut in half lengthwise), broccoli, cauliflower, and chicken.
    I will take chicken and mix with curry powder and start sauting the veggies, taking them out of pan when they are slightly cooked, then saute the chicken, and add all the veggies back into the pan with more curry powder, some boullion and a little water. After it has cooked for a while, I take off the
    cover of the pot, and let some of the water reduce, and add a little cream to thicken and lighten the flavor...
    it is usually wonderful and I have some in the freezer as we speak.
