| Hello! I usually do a lot of cooking on the first day of the week (we typically shop on Sunday evenings). Hubby and I are both LCer's so I get the fridge stocked with great LC entres and side dishes so it's more difficult to make a poor choice when someone's tired AND hungry. I've got a 7# roaster chicken...ah...roasting <wink> I have dry-spice rubbed country style porkchops in the oven too (they did get their rub yesterday afternoon and are ready to roast. Cauliflower floweretts in the micro (1/2 will be faux-tatoes and 1/2 will be faux-tato salad). a dozen eggs about to be to hardboiled (for the faux-tato salad and half for egg salad.) I want to do something celery oriented, and I've got an eggplant and some zuccini calling my name too <grin> So what's cooking at your house? What's your favorite vegetable salad idea? (come'on I'm desperate!) Angela |

| I cook on the weekends for "planned over" meals for the rest of the week! This past weekend I made General Tso's pork with red bell peppers, and yesterday I made a 3 pound meatloaf. Tonight I'll heat up the pork and nuke some snow peas, and I have bagged baby salad mix from Trader Joe's to eat with the meatloaf. I always add red bell pepper, green onions, Calamata olives and feta cheese - sometimes I will also open a can of artichoke hearts and/or hearts of palm too. Another really good salad is broccoli salad. It's very easy too. If you don't have or can't find the recipe for it (I believe it's in our Recipes section) I will post it for you. Something else I frequently do is oven-roast a big panful of various veggies - cut them up, shake in some extra-virgin olive oil, sprinkle with garlic salt and roast at 425* til browning. Good for peppers, asparagus, green beans, halved & lightly steamed brussels sprouts, mushrooms, even broccoli and cauliflower! You can sprinkle on a little balsamic vinegar after cooking if you like. | I should take a lesson from you, Angela. Cooking several meals ahead of time is really smart. The only thing I've got cooking today is a head of cauliflower that I hope to make into fauxatatos this evening. What will I have it with? Gee...I haven't thought that far ahead. Maybe some grilled chicken since it cooks fast in our tiny little Foreman grill.

| Just went to this market after work today, plan to make several things for the week. This is the absolutely best thing to do to avoid grabbing something off plan when hitting the door with the munchies after work. |

| Tho I had the day off yesterday, and i should have done some massive cooking, dh likes to cook, and he usually does the m-f cooking, so I don't have to come home and cook (he is disabled and home so....) anyway, last week he got out some chicken breasts (bonless, skinless) and pounded them out thin, and put a slice of ham, some spinach, and some grated cheddar and swiss cheese, and rolled them up. he sprinkled poultry seasoning on top, I came home, turned on the oven, and put a little rose` wine in the bottom of the baking dish and put in oven 325 for about 45 minutes.... boy o boy were they good....the chicken drew up the flavor of the wine and it was something out of this world.... c

| Our local grocery store, Kroger, had eggs on sale: an 18 ct. carton for 99 cents! I bought 2 and I'm now wondering what to do with all these eggs! I saw a quiche recipe in a magazine....I didn't want to do a crust, though. So, I whipped 6 eggs and some heavy cream together in a bowl and added a (drained) can of spinach, some cubed ham, some grated Asiago cheese, and some colby/jack cheese. I baked it at 350 (can't remember exactly how long). I used a Pyrex square pan and cut it into 9 pieces. It is marvelous! I'm getting better at this experimenting thing! Spending $3-$4 every day on breakfast really adds up! AND, I need more veggies in my menu. So, these "quiche squares" should help me out on both of these issues! I usually have some leftovers from dinner for lunch, so I can avoid the drive-thru now for the rest of the week. I wonder if it would freeze well? Tonight I made turkey chili for dinner:ground turkey, browned with onions, added a can of black beans, a can of Rotel tomatoes, a can of Picante V-8 juice, and some flaxseed meal. Oh, and the obligatory chili powder and cumin for the traditional chili taste. Good stuff. And, that's what's cooking here!

| The crustless quiche is a great idea!' I don't see any reason why it shouldn't freeze well. If I made it, it wouldn't last long enough to need freezing though. I'm home sick today. I finally had a day without appointments and I'm hoping to sleep a few hours and knock this cold out. But maybe I'll spend an hour doing some cooking to make the rest of my week a little easier to get through. The quiche is on my list of ideas.

| I made a huge batch of stirfry today. I put all the leftover uncooked vegetables from the week in it-- peppers, an onion, squash, broccoli, cauliflower, tofu & some chicken. We had it for dinner tonight, I'll have it for lunch tomorrow, & we'll get another dinner out of it maybe Tuesday. Sometimes if I find leftover cooked veggies in the fridge I make a quiche. If we don't eat all the stirfry, I may make it into a quiche & freeze it.
