| Since hot & spicy foods are so popular and there's a lot of talk about Frank's new chili lime hot sauce, I thought it would be neat to share ideas about just how we use our favorite sauce. If anybody has a really unusual way that you use it make sure we're the first to know. I've used many and my alltime favorite is Frank's. One of my favorite ways to use it is to sprinkle a little puddle on my plate and dip my chicken. |

| I put Tabasco chipotle on almost everything: eggs, burgers, steak, chicken. I like to add a shot of Tabasco to things like homemade blue cheese dressing, meat marinades, meatloaf, etc. to perk up the taste. It's awesome added to meatball mix. I mix Frank's with butter for classic Buffalo wings, and the Chili Lime is great mixed with mayo as a sandwich spread. It's also a good addition to homemade cocktail sauce (lc ketchup, lemon juice, and LOTS of horseradish!), and I like it added to homemade salsa. That's the normal stuff. However, I put Tabasco in my chicken broth when I have a cold, and I like to dip cheese cubes in it for a snack. I stuff celery with cream cheese mixed with blue cheese, and dip them in Frank's...kinda like buffalo wings without the wings. Weird, huh?

| Frank's Red Hot is my all-time favorite "plain" hot sauce. I use it mostly for wings and lots of other chicken dishes, eggs, on crustless pizza, omelettes, a dipping sauce for sausage, in cooked greens, and will *definitely* be trying that celery/cream cheese/blue cheese idea! Tabasco Chipotle is my favorite "flavored" hot sauce. I use it for all of the above, plus add it to sour cream and/or cream cheese for dips, as a baste for grilling meats and veggies, as a sauce for steak and pork, in tacos, on hamburgers, on pork rinds...there is very little that doesn't seem to benefit from this stuff! | I use Texas Pete which is made right here in winston-salem. It's almost a clone of Frank's hot sauce. But i bought the chipotle tabasco sauce yesterday because of recommendations in the cooking forum. MAn is that goood! I made burgers with it, soybean chile, grilled chicken breast and hot wings all using this stuff. That's 4 for 4 meals since I got it. |

| I'm definitely in the minority - I am not at all fond of very hot sauces. To me, I cannot taste the food any longer when the burn sets in. That's not to say that I eat only bland, mild foods, but super hot sauces hold no appeal here. I don't like most bottled salsas or picante sauce, but I like the fresh-made salsas I find in the local Mexican restaurants (there's one on every corner in this area); and I like to make my own salsa cruda or salsa tosco. I have to wear gloves or put plastic bags over my hands when I cut the peppers, though. I can't stand it when the juice hits the quick of my fingernails - ouch! When I do use hot sauce, it's as an ingredient rather than as a condiment. I normally use Heavenly Chef brand Hunan Red Chili Sauce. I have a bottle of Tabaso if I just want to add a touch of chili to something like a salad dressing.

| Franks Red Hot sauce is the all time best hot sauce ever! I use it on EVERYTHING from chili, pizza, eggs, chicken etc... Oh yah! |

| I'm not much of a cook these days so I don't really get much chance to experiment. It's just the two of us and my son is so darn picky! And like Teel, I'm not fond of jar salsa. It's gotta be the real deal or nothing...well, I do like it when the gal at work brings in Pace Picante and pours it over a block of cream cheese....but that's the exception. For our beef tacos, we really like Lindy's taco sauce, which is made in nearby San Bernardino. Before low-carbing, we made our tacos "depression" style. That is, we mixed ground beef with a can of refried beans and then stuffed the mixture in fried tortillas. I prefered flour my son prefers corn. For chicken soft tacos, we like Franks Red Hot...which is actually more vinegar tasting than hot. (Teel, you might like this one because it's not at all hot) Sometimes I'll sprinkle a little bit of Franks on my chicken salad. The flavor blends really well with ranch dressing. I've not tried Franks, lime, but I think I'd love it because I like my homemade salsa extra "limey." I also like lime and salsa on my chicken and if I was out, I'd use the lemon the waitress stuck on my tea. (I don't care for lemon in my tea) I like regular Tabasco on my eggs. I haven't tried Tabasco chipotle. Is a "tabasco" with a twist? or a different kind of sauce altogether made by the Tabasco company? I also like to add a touch of Tabasco to barbecue sauce if I'm using it on ribs or chicken. I'm looking forward to seeing some of the other uses for these hot sauces. I really need to get more variety in my menu...but first I have to get off my fanny and cook!

| i usta love franks redhot, But even since LC, it causes my acid reflux to act up. i love WINGS i would eat them 1 time a week if i could.. but i love garlic so i tend to make a garlic spicey wing.. after they are done bakeing in oven to crisp i then put sauce on and sprinkle w/ grated parm cheese and put back in oven on 200.. to allow the sauce to marry w/ them .. i do a basic garlic (minced) butter sauce and add redhot too it.. someitmes have even added some dried ginger.. gave it a realy weird twist..

| BUFFALO CHICKEN QUESADILLAS Prep Time: 5 minutes Cook Time: 5 minutes 2 cups finely diced cooked chicken 1/3 cup FRANK'S REDHOT Cayenne Pepper Sauce 2 tablespoons melted butter 2 cups shredded Monterey Jack cheese 8 (8 inch) flour tortillas (I use Mission L/C ones) Blue cheese salad dressing 1. Toss chicken with Frank's RedHot Sauce and butter in bowl. 2. Layer chicken mixture and cheese on 4 tortillas, dividing evenly. Cover with top tortillas. 3. Cook about 3 to 5 minutes on an electric grill pan or barbecue grill until toasted and cheese melts. Cut into quarters to serve. If desired, serve with blue cheese salad dressing and additional Frank's RedHot Sauce. Makes 4 servings Tip: You may substitute 1/2 cup FRANK'S REDHOT Buffalo Wing Sauce for the butter and original Frank's RedHot Sauce mixture. |

| Melissa, the Tabasco Chipotle is Tabasco made with chipotle peppers (dried, smoked jalapenos) instead of red peppers. It has some red pepper and you can taste its Tabasco "heritage," but it's pretty much a different sauce altogether. It also contains garlic, onion, and some other spices. It's thicker than regular Tabasco, brown, smokey, not as vinegary, and not as hot as regular Tabasco (although it still has a decent kick). Aderyn |

| Everybody has such great ideas. Texan, that quesadilla recipe sounds awesome and I will be trying that soon! Trina, your idea of using hot sauce as a "behind the scene" ingredient sounds great. I really haven't used HS in cooking as much as I have used it as a condiment. Gilley, your garlic wings are a good idea. I think the Frank's lime would go good. I want to pick up the Frank's lime and the Tabasco Chipotle. |

| We LOVE hot sauces in this house, and have plenty of different ones - but the "go to" sauces are always Franks Chile Lime (for wings), Louisiana Hot (for eggs) and Chipotle Tabasco (for everything else!) - we also have a full complement of Asian-style sauces and a Balsamic vinegar-based hot sauce that is very good too. Meatloaf, clam dip, scrambled eggs, most casseroles - they all get a shot of one kind or another! Char

| I picked up a bottle of the Chipotle Tabasco today! I took a little taste and pronounced it GOOD. I don't think it's as hot as the regular Tabasco. Then, again, maybe I'm just developing a tolerance for heat.
