| I made this dish the other night..(I love cooking with wine, altho I don't care to drink the stuff) and this was delicious! I don't know the carb count... check out the link.. http://chicken.allrecipes.com/az/Qui...kenAndWine.asp Quick chicken and wine INGREDIENTS: 4 skinless, boneless chicken breast halves - cut into strips 2 eggs, beaten 1/2 cup Parmesan cheese 1 pinch salt 1 pinch ground black pepper 1/2 cup white wine 4 tablespoons butter -------------------------------------------------------------------------------- DIRECTIONS: Season chicken with salt and pepper to taste. In a shallow plate, spread Parmesan cheese. Divide chicken into three parts and dip seasoned chicken in eggs, then coat well with Parmesan cheese. Repeat until all of the chicken pieces are well coated (if you run short on egg and Parmesan, add one more egg and more Parmesan as needed). In a skillet, melt butter or margarine over medium high heat. Cook chicken, stirring frequently, until golden brown. Reduce heat and add wine. Cover and simmer over low heat for 20 minutes

| Is the wine necessary? Can I substitute a bit of chicken broth? Like you, I'm not a wine drinker. Oh, I did find one wine that I love. It's Muscat canelli bottled by a local winery. It's a super sweet dessert wine. I enjoyed it so much that I bought two cases! And then I went on Atkins. I've given away a few bottles but still have a full case left.

| I found the following for you.. yep, you can substitute something for the white wine, but remember, once it is added to your recipe, it does not taste the same as it does if you just take a swig of it.. it not only loses the alchol content, but it adds flavor... but here are a list of recommended subs... Non-alcoholic wine, chicken broth or stock, diluted white wine vinegar or cider vinegar, white grape juice diluted with white wine vinegar, ginger ale, canned mushroom liquid, water. For marinades, substitute 1/4 cup vinegar plus 1 Tbsp sugar plus 1/4 cup water.

| I love using wine when I cook. I don't care for it as a beverage, but love using it in recipes! Thanks for sharing LouG.

| Sounds very good Lou. In fact sounds similar to something I make every once in a while. Except I love wine so when I cook with it more ends up in my glass than in the pot. LOL |

| I know that the alcohol evaporates when the wine is cooked, but is there any chance that it changes the sugar and carb count? (wishful thinking)

| I'm sure someone has the answer to that question... its never bothered me tho.. but then, I don't use wine in my cooking everyday, so maybe its the tiny splurge that works for me??? I do know tho, that we have to burn off alchol, but since that is cooked out, perhaps it might make a difference???

| Nope, sorry, it doesn't burn off the carbs! I wish When you cook and reduce a liquid (any liquid) the flavors and components of the liquid are concentrated into a smaller volume of liquid but all that WAS there when you started, still is. Basically, when you reduce a liquid, you are doing nothing more than evaporating the water. In the case of wine, you are both evaporating the water AND burning off the alcohol. So, you will lessen the calories of the wine you used because the alcohol will be gone but any carbs contained within the other elements will be left behind in your sauce.

| Thanks, Marcie. I didn't think the sugar would dissolve into thin air. But, you know, for some reason I never considered the fact that alcohol calories would be gone with the alcohol. (duh! It makes sense!) I should check the carb count on my wine. It's really good. And I would like to have a glass now and then. Unfortunately, it's really sweet so I imagine it's sugar laden.

| Figure about 10-12 carbs for a 3.5 oz. servings of a sweet dessert wine. Regular red table wine has about 1.5 - 2 per serving and white about 1.
