Tried to make some of these, tasted really dry and not very sweet.:o Can anyone out there please help me with how to increase moistness and taste with these products.? |

| Welcome, greenrn. I'll move this to the lowcarb cooking forum, where you may get some tips. However, if you're just starting out, these products are not a good choice for induction. Indeed, they're probably best avoided (or used very sparingly) during the Ongoing Weight Loss stage. All the low carb frankenfoods, including these items as well as the bars and lc chocolate, have a number of suspect ingredients which many members have found stalls their weightloss. Some of us who do blood glucose testing have found that they raise blood sugar a whole bunch more than they should for the "net carbs" advertised. Just a heads up for you! I hope you'll make yourself at home.

| Maggie's right about not using those things during induction or early OWL. I'm in maintenance and I do love the muffin mixes, especially the banana walnut and the lemon poppyseed - I make muffins not loaves of bread though. Be careful not to overbake, which dries them out. I use either melted coconut oil or extra-light olive oil and I found the muffins to my liking. As for the brownies, I bake them in an 8 x 8 pan for the minimum amount of time - they are always very moist and I really like them! Welcome to LCE! Char

| I don't use these products, but I was a baker for many years and there are a few things you can do... It sounds wierd, but try adding a T or 2 of mayonnaise to the mix. (Maybe not the bread, I have no idea what that would do. If you do w/ bread, let me know; I'd be interested) Always keep a pan of water in the bottom of the oven that is steaming by the time you put the product in to bake. Coconut oil is an excellent suggestion above. Hope that helps Zephyr ---just noticed that it is lemon poppy bread, not regular bread for sandwiches. Mayo is great softener for sweet stuff, and good to add to chocolate. I'd mix unsweetened cocoa powder to the mayo for the brownies..... |

| hmmmm, mayo. i used the coconut oil myself and it help with the dryness. also instead of water, i use coconut milk. turned out very good, but ive only tried the brownies not the muffin mixes. will have to try the mayo, next time i bake.

| After 14 months or so, I finally got around to trying Atkins corn muffin/bread mix. I couldn't just make it straight, of course; so I can't tell you very much. But mine came out very moist. I grated some sharp cheddar cheese into the mix and added very moist chopped red chili peppers -- from a jar. I shoveled huge dollops of chili peppers in -- and you know what? There wasn't a hint of soy dreariness - no-sir-reee! |
