Bag of Baby Spinach

"Low Carb Cooking" at Low Carb Diet Support: "I usually just put this in salads. Are there other ways to eat it? Sorry to be so dumb....."

I usually saute' some in a little butter then add them to my omlets.... If you like spinach, you will find it quite delicious! Also, there is a recipe for spinach bread in the section entitled "recipes" which you will find the link to above... it is good as well. Hope this helps

I put it anywhere I can put lettuce, on burgers in sandwiches(before LC) I love to saute it like Rhonda suggested or use it to wrap chicken or egg salad rolls. The larger "adult" spinach is easier to roll but doesn't have the same tender taste.
I made pasta with it once and it turned out well, I wonder how homemade pasta would turn out using protien powder instead of flour? Has anyone tried?

it is great with crumbled bacon, red onion, hard boiled eggs, and Salt pepper, and mayo...It is also good with a hot bacon dressing, but the best way of all was what I had at a restaurant, maybe chilis,... it was a strawberry spinach salad.. I came up with my own version of it, but can't find it now.. but it had spinach tore up in a bowl, sliced strawberries, pecans, and a poppy seed dressing.. it was so good. I imagine you can find a poppy seed dressing recipe online someplace.

There is another dish I fixed, "spinach and mushroom casserole that is great. I found it here, so I'll just let ya go look for yourself...Hope some of this helps.

Strawberry Pecan Spinach Salad

From the Kitchen of: Pepper.
Source: At Your Service Southern Recipes, Places and Traditions Fulton Counties, Inc.


1/2 cup Pecan halves
1 lb. Baby spinach
1 pint Strawberries, hulled, cut into halves
1-1/2 Tbsp. Poppy seeds
1 cup Light vegetable oil
1/3 cup Red wine vinegar
2 Tbsp. Finely chopped onions
1/4 cup Sugar
1 tsp. Salt
1 tsp. Dry mustard


Spread the pecans in a single layer on a baking sheet. Bake at 350 degrees for 8 to 10 minutes or until toasted.
Combine the spinach, strawberries, pecans and poppy seeds in a large salad bowl.
Combine the vegetable oil, red wine vinegar, onions, sugar, salt and dry mustard in a small bowl and whisk well to blend.
Pour the desired amount of the dressing over the spinach mixture and toss to coat.
SERVES: 4

by the way, of course you know to use splenda instead of sugar in the strawberry pecan salad.

I put some olive oil in a large skillet and get it moderately hot, then throw in a clove or two of smashed garlic (to flavor the oil) - as soon as the garlic turns golden, remove it and add some pine nuts, stir until just starting to brown. Remove the pan from the heat and add the spinach, and cover. It will wilt down. Stir well to distribute the oil. Eat. MMMM!

Last week I ended up with a lot of leftover baby spinach (DH makes a spinach salad for his lunch every weekday) so I nuked it until it JUST wilted down, then stirred in some mayonnaise and garlic powder and some snipped cooked bacon - then I stuffed that under the skin of some chicken breasts and baked about 40 minutes at 350*. Boy were they good!

I like the taste of garlic with spinach, too. I like to do much as Char does, but instead of pine nuts, I like to saute up a bunch of sliced mushrooms in the oil after the garlic is done. Then, add the spinach, cover, remove from heat and let it wilt.

Maybe next time I'll do pine nuts AND mushrooms with it!

by the way, I just remembered which restaurant served that spinach-strawberry pecan salad.. it was cracker barrel, and they serve it with chicken salad. I didn't have it, I just saw it advertised... sounds great!

I love this stuff --

I saute the whole bag in grapeseed oil (usually Italian herbed)
once it's all "soggy" i'll toss in grape tomatos (those real lil ones, cut in half)
top with fresh grated cheese -- parmaesan or asiago or the sort

sometimes i'll add green beans too

makes 2 servings... YUM.

Spinach sauteed with garlic and olive oil plus a bit of grated cheese makes a great "stuffing" for flank steak, skirt steak, or flattened boneless chicken breast.

Lay out your meat, flatten it with a one of those pounding thingies, and then spread the sauteed spinach over it. Roll up the meat (like a jelly roll), either tie it with string our use skewers to keep it from unrolling. Then roast until the meat is done (medium rare for beef or until the juices run clear for chicken.
