    Default If you like the flax HB bun your going to love this.

    For those who are enjoying the flax HB bun I thought I'd share this with you.

    Sponge Bob's Flaxseed Meal Bread

    2c flaxseed meal (I use Bob's Red Mill)-0
    1c pecans-5
    2 teaspoons liquid Splenda-0
    1tsp baking powder-1.3
    1tsp baking soda-0
    5 eggs (beaten)-3.4
    8 T SF syrup w/Splenda-0
    5 T vegetable oil-0

    Preheat oven to 325?

    Mix together all dry ingredients in a bowl, then in a separate bowl, mix all wet ingredients. Fold dry ingredients into wet and mix well (don't beat like crazy, but be sure it's mixed well or the eggs do funny things!).

    Immediately transfer batter to Pam/etc-sprayed loaf pan bake at 325? for 35 min. or until it passes the knife/toothpick/etc. Test.

    16 serving
    Based on 16 servings per loaf, this is what I get:

    Calories 162

    Today I made a carrot cake..it was so yummy..

    Do the basic recipe..but add 1 1/4 tsp. of cinnamon to the
    dry part and I used 1/2 cup of walnuts, chopped for the nuts

    And, one tsp. of vanilla and one small can of sliced carrots
    chopped up and drained to the wet part.

    Spray an 8 x 8 pan and bake for 30 minutes until done..watch
    carefully.

    Soften 8 ounces of cream cheese. Add 1 Tbs. of Davinci's to
    the cream cheese and frost over cooled cake...

    I did a chocolate version today...

    1 cup golden flaxseed meal
    1/2 cup almond flour
    1/2 cup WPI
    1 tsp. baking powder
    1 tsp. baking soda
    1/2 cup toasted almonds
    2 Tbs. cocoa
    1 cup of Splenda..increase for the chocolate

    Liquid:

    5 eggs
    8 Tbs. Davinci Raspberry
    5 Tbs. oil
    2 packages of Choco-Bake or 2 ounces melted baking unsweetened
    1 tsp. vanilla

    Mix dry ingredients..then mix up wet ingredients in a separate
    bowl. Then combine and pour into loaf pan and bake 35-45 minutes at 350. I sprinkled a few untoasted almonds on the
    top.

    It is wonderfully rich.....

    I made a pumpkin bread from this..

    I used 1/2 cup of pumpkin with the wet ingredients and
    2 tsp. of pumpkin pie spice in the dry ingredients. I like
    to make mine using 1/2 flaxseed meal and 1/2 almond meal
    and sometimes using WPI..or a little Atkins mix.

    For the pumpkin bread, I only added one Tbs. of oil or melted butter as the pumpkin is pretty wet.

    The variation that is getting the most votes from my family is:

    1 1/2 c. flaxmeal
    1/2 c. hazelnut flour
    1/2 c. coconut
    1/2 c. chopped walnuts
    1 serving of whey protein powder
    1 tsp. each of baking powder and soda
    1/4 c. xylitol
    heaping 1/4 tsp. salt
    5 eggs
    3/4 c. Da Vinci Macadamia Nut syrup
    1 c. Trader Joe's frozen wild blueberries
    2 T. Butter
    2 T. coconut oil
    1 T. sunflower oil

    Bake at 350 for one hour and fifteen minutes. Slice into 16 pieces and let steam for an hour or so to cool and dry out a bit. Then put back in baking pan and enjoy all week!

    My son assures me that this is the best batch yet.

    For those of you who have the German Chocolate DaVinci, this makes a wonderful bread! I used Carolyn's recipe for her choc. recipe.

    German Choc. Bread

    bowl. Then combine and pour into loaf pan and bake 35-45 minutes at 350. I sprinkled a few untoasted almonds on the
    top. (A 1/2 cup of unsweetned coconut is also good to add for the German Choc. version). I use the muffin pan. It makes 12 cupcakes. Be sure to use the foil part of the liners. It takes about 15 minutes for the cupcakes to bake.

    Yes, that little flaxmeal HB bun is a great little recipe - quick and easy and very good. My Mexican friend (not LC) thought the burger buns were very tasty.

    And, what a great collection of quick breads! I'm quite looking forward to trying these.
