I've found that it was very important that I discovered, pretty early on, that chocolate (in and of itself) was an OK item. I can do without a lot of stuff, but .... well.... I mean, chocolate ....

This cake is very yummy, indeed.

Our fav. way with this cake is with DaVinci's Caramel syrup instead of water....topped with cocoa flavored whipped cream and a few sliced strawberries. Granted...only occassionally

I've already told hubby to learn how to do it all for my bday next month LOL

I haven't eaten wheat for years as I used to suffer quite badly from irritable bowel so to me this is heaven.

Cocoa flavoured whipped cream sounds heavenly, is that just whipped cream with cocoa stirred in? I must admit I prefer my cake with fluid cream.

I have a friend coming round for dinner tonight so I am planning on making it again as pudding, he doesn't like cream so I might just melt some unsweetened dark chocolate I have and spread it on top and we shall have it cold. yum yum yum

I make it in a lovely little round microwave dish I have and it looks so pretty.

The melted chocolate on top sounds divine, I'll have to try that.

I've made this cake with pecan meal and DV German Chocolate Cake syrup and sometimes stir in a little coconut. Makes a very satisfying substitute for German Chocolate cake which is my favorite.

Alcmene, one of the most gratifying perks of LC was eliminating my IBS completely when I cut out the grains from my diet. I wish I had known years ago that they were the culprit.

Well, I have been wheat free for two years previous to starting LC so in essence it really wasn't that difficult for me as I hadn't eaten bread/pasta for so long. It was harder giving up potatoes and rice but not as hard as going wheat free the first time round, that was very very difficult, especially as so many things have got wheat in it that you wouldn't expect.

Big vote for Davinci German Chocolate cake syrup instead of water. Heavenly. By the way everyone I have scaled up this recipe with no problems. Times 5 on a couple occations and times 4 many times.

I usually take X1 with me as a snack in the middle of my work out or afterwards at the gym. People ask what I am eating, I tell them chocolate cake, and they shake their head at me in disaproval. I tryed to tell them about it a couple times but their minds are made up, so I don't bother any more. I ussually have a bottle of iced tea with me also flavored with Davinci and I sometimes pour a bit into the cake container as it can be a bit dry.

Stephen, I tried this with many different nut meals and almond is VERY dry. If that's what you are using, I would HIGHLY recommend trying hazelnut or pecan instead. MUCH better results that way, especially with pecan flour.

Also, coconut oil as the fat works WONDERS.

SO nice to see your smiling face again Marcie, as well as TeelBee's fishy going back and forth.. I've been off in the netherlands of this site and my sculpting far too much. And failing my diet big time. Getting back on the horse soon enough though. Third of next month to be rediculasly percise.

Yes it was almond flour I was using. I will pick up some pecan flour at Trader Joes next month. I imagine I will find some coconut oil there as well.

By the way I am with Maggie in the chocolate. I can hardly make my own LC Chocolate Candies because I eat so darn many at one time. Or make like a yo-yo going back and forth between my desk and the freezer. Reason goes straight out the window when chocolate comes in.

Yes this is why this cake is so good, you have your small serving and that's that. I find whenever I cook anything sweet in big batches (such as coconut macaroons) I just have to eat them all until they are gone.

Ummm... Doesn't that look good! I'll need to make one tonight!

I agree with Marcie that using coconut oil does wonders in adding moistness to the cake.
