| Carbquik HB Bun-3.5g carbs 1 tablespoon melted butter 2 tablespoons almond flour 2 tablespoons Carbquik 1/4 teaspoon baking powder 1 jumbo egg Stir all ingredients together very well. Place in a microwave save cereal bowl and cover tightly with plastic wrap. Poke 3 vent holes in the plastic wrap and microwave for 1 minute. Let it sit for about 3 minutes then turn out and slice. Note: I haven't tried this with a regular size egg. My hens lay very big eggs so that's all I have. The batter is the same consistency of cake batter. So if you try this with a large egg you might want to add a tablespoon or so of water to get the right consistency.

| This looks perfect. I got my carbquik a about 2 or 3 weeks ago but I haven't tried it yet. All the recipes on the box are for 6 servings or more and I only wanted to make something small. Wow - your own hens! How great is that? I got some jumbo eggs at Trader Joes recently (usually I just buy large or ex.large). They were huge and two out of a dozen had double yolks. I'd never seen a double yolk before in all my 50+ years.

| Wow Betty Having your own laying hens is fantastic! Starting in May I'm able to buy Farm fresh eggs from the local farmers market. LOve those so much more than the storebought month old eggs I have to buy in winter. And Teelbee - all the eggs in the dozen they sell are double yolks! I usually have just one for breakfast because they're so huge. The only problem is you have to be at the Farmers Market by 6:30 - 7:00 or the eggs are all sold out.

| Yes, fresh eggs are really good if they come from free range chickens that can get their own natural food and some grass. The yolks are so much thicker and darker in color. We have a bunch of free range chickens that live at our horse barn. They lay a glut of eggs in the spring, but also lay way more than we can use on a regular basis. The older hens will hide a clutch of eggs several times during the year and pop up with a batch of new babies. We gather the eggs twice a day when we go to feed the horses and I sell them for a dollar a dozen to friends and neighbors and use the money to buy chicken feed. They catch a lot of their own food but feeding that many chickens can get expensive, so they basically support themselves. I don't even know where the first group of hens came from. They showed up at the barn one day eating the feed that the horses dropped, and first thing I knew there were a couple of roosters and as things go they began to multiply. There wasn't enough dropped horse feed to go around and I made the mistake of buying a bag of chicken feed. One thing led to another and now you'd swear we were running a chicken farm. The area that our horse barn is in has a lot of pastures where people keep cattle and horses and there are quite a few barns in the area. I guess the hens wandered in from one of the other barns. There was all that horse feed lying around and they just decided to stay. I'm guessing that the roosters were attracted by the hens. The first time I noticed them there were three hens. Over time there was just more and more of them. I'd always heard that chickens will keep snakes away, whether that's true or not I don't know, but we didn't mind when they moved in. I'm sure that they've spread to other barns in the area by now as well. My mother said I should take the old hens and make stew with them and that would keep them from making so many new babies but I just can't do it.

| *** bump****** I JUST MADE THIS on my lunch hour and i have to say " this is a great recipe and i will make this more often - its better then store bought bread and its still warm when you put the butter on it!" THANK YOU Bettyr...i too have hens and their eggs are x-large this recipe is a keeper

| Cindy- I'm so glad you enjoyed it. I think with a little tweaking this could make a good bowl muffin.
