Thumbs up Curried Rice Pilaf

Tonight I decided to try to create a low carb version of one of my former high carb favorites, curried rice pilaf. I was very pleased with the result. This is what I did:
1. Sliced 1 pound of mushrooms and sautee in 1 stick of butter and 1 tsp pepper until all the liquid released from the mushrooms evaporated. Drain and set aside.
1. Shredded 1 head of cauliflower using the shredding disc of a food processor.
2. Microwaved on high, in a covered casserole dish with 6 Tbls water for 8 minutes (stirring after 4 minutes). Drain.
3. Melted 3 tbls of butter in a wok, added 3 Tbls oil, 1 Tbls minced fresh ginger root and 2 cloves of minced garlic. Stir fried for 2 minutes, added 1/2 cup chopped onion and 2 tsp curry powder and continued cooking until the onions were soft. added mushrooms and stirred to combine.
4. Added cauliflower and tossed to thoroughly mix and coat the cauliflower.
5. Turned off the heat and served.

"Caulirice" is a nice substitute. So good for you too.

After trying this dish, I declared it a "keeper" that would make regular reappearances in my menu planning. That decision was reinforced when I found that as a "leftover", it aged well and reheated was even better. One way I have of confirming my judgement is the reaction of my non-low carb spouse to a dish. She will have fauxtatoes once, but any leftovers are all mine. With this dish, she portioned the leftovers so she could have them with me for 2 more meals.

Your wife better keep a close eye on you, she has no idea how lucky she is. My DH can make a mean peanut butter and jelly sandwich and that's about it.

LOL! Ditto that sentiment - although my DH's repertoire starts and stops at "onion scrambled eggs" - they ARE yummy though!

sounds like a keeper recipe

yah know my DH always goes on about how good of a cook he is .. but i would never know LOL.. there is a sign in my kitchen "Angie's kitchen only Keep out!"
The only thing he makes is left overs or sandwiches.. well he can handle mac n cheese when im not home but much more than heating something up i dont think i would trust he has the attention span of a 3 yr old (trust me i know i have one of each ..lol.. dh and a 3 yr old)

I'm so excited because now I can come up with a cauli special fried rice!

Kerry, I would stir fry some zucchini, cut in half lengthwise and then cut on the bias cross wise in 1/4" - 1/3" slices. Celery and green pepper would also work, or a combination of all of the above.

Thank you Henry...those vegetables sound A-OK... I have been researching recipes and collecting those that sound like keepers. This one looked great 'cept for those mushrooms..
