Impossible Lasagne Pie

1/2 cup cottage cheese
1/4 cup grated Parmesan cheese
1 pound ground beef, browned and drained
1 cup shredded mozzarella cheese, divided
1 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon crushed red pepper
6 ounces tomato paste

1 cup Carb Countdown 2%
2 eggs
2/3 cup Carbquick
1 teaspoon salt
1/4 teaspoon pepper

Preheat oven to 400F. Grease an 8-inch square pan; set aside.
Layer cottage cheese and Parmesan cheese in prepared pan.
Mix cooked beef, 1/2 cup of the mozzarella cheese, the oregano, basil and tomato paste;
spoon evenly over top.
Beat milk, eggs, baking mix, salt and pepper until smooth;
15 seconds in blender on high- or 1 minute with hand beater.
Pour into pan.
Bake until golden brown and knife inserted in center comes out clean, 30 to 35 minutes.
Sprinkle with remaining cheese.
Let stand 5 minutes before serving.

hmmmm sounds good rhonda... i have never even SEEN carbquik in a store let ALONE tried it... have you??

Kim, it's getting harder and harder to find these days. Lots of the low carb things are. Guess, eventually, if I choose to keep making the things I use it for, will have to buy in online.


Lemon-Poppyseed Muffins

1/2 cup butter, melted
1 cup sour cream
1/4 cup lemon juice (bottled is fine)
liquid Splenda equivalent to 1 cup sugar
1/2 teaspoon grated lemon peel
1/2 teaspoon poppy seeds
2 cups Carbquick

Preheat oven to 425F.

Cream butter, sour cream, lemon juice and sweetener. Stir in lemon peel and poppy seeds.
Add Carbquick and mix lightly by hand, just until Carbquick is moistened.
Batter should be lumpy. Do NOT over-stir.
Divide batter evenly among 12 muffin cups.
Bake for 20 to 30 minutes, or until golden, and toothpick comes out clean.

Per Serving (based on 12 servings): 171 Calories; 15g Fat (68.1% calories from fat);
5g Protein; 11g Carbohydrate; 8g Dietary Fiber; 29mg Cholesterol; 218mg Sodium.

well i recall checking at wallys world few months back.. but never saw it..
my daughter told me that dreamsfield was being discontinued at our local store too..
