Does anyone know a source for soy protein nuggets? All the low carb bars use them, and I thought I could make my own bars if I can find a source for them.

Soy protein nuggets, as used in low carb bars, are a blend of Soy Protein Isolate, Rice Starch, and Brown Rice Flour.

I suppose if you could find all of those ingredients, and blend them in the correct quantities, you could make your own.

I dunno.

Do you mean like TVP? Texturized Vegetable Protein is the long version!

I used to buy it in the bulk bins at Whole Foods. Bob's Red Mills also prepackages it. It looks rather like Grape Nuts or finely crumbled graham crackers.

I used to eat it a LOT when I did WW but backed off of soy products. However, when I WAS using it, I had a recipe for a protein bar - if I can find it I'll post it for you.

I also found it made a nice crunchy topping for fruit crisp!

TVP isn't the same thing. These are like Rice Krispies but made with soy. I'm not sure if they are available for consumers but I'd like to find them.

I haven't either. But Zone Bars, South Beach Bars, and Q Smart bars are all made with them. Probably lots of other ones are, too. They're crispy and high protein. If I could get some, I imagine I could make some really good protein breakfast bars, like with peanut butter.

...and then there's probably an extruder/cooker gizmo needed, something like an automated spaetzle maker?

Terra,
I've been looking for the soy pro crisps/nuggets as well. My thinking is like yours...make my own snack bars WITHOUT MALTITOL!!! LOL.
My hfs has the TVP also, but that is not what we need.

Antons...does the place you refer to in Reno have a website?

Oh goody...a new challenge...heh!

I grew up eating TVP and I'm not going to try it again. I still haven't found a source for the nuggets, though.

I wonder if you could use some kind of breakfast cereal? Maybe there's a "soy krispies" type thing out there?

Bren, good idea!!! Have you tried those yet??? I wonder how they taste. If they taste good as a cereal, they'll definitely taste good in homemade chocolate bars.

Nope, haven't used them, but had thought I'd seen some soy cereals at whole foods--there could be others that have more of the airiness of crispies. This is the first one I ran across though. Worth a lookee, maybe.

I bought Keto Crispies or something like that a couple yrs ago (quite tastey, actually) with the intention of making chocolate crisp bars, but never did. Now I think Keto is out of business. I'll have to check Nutrition Network here in Winfield. This sounds like a great idea!!!! Soy is one of those weird products. Sometimes it tastes great and other times it tastes really YUK!! I suppose it all depends on how it's prepared, and if it is soy protein isolate or flour or whatever. Flour IMHO is NASTY!!!! If you're interested, I'll check it out and let you know what I find.
