| SO a friend read about flaxseed used as low carb and got me some. Great, yes, but I have no clue what to do with them.. Any ideas? They look like sunflower seeds .. only darker, what on earth am I to do with these? LOL |

| I love them sprinkled on my salad I usually try to mix with the dressing they sort of have a "taste" to them but not too detectable if disguised right I know some use them for baking...

| Ammy, Flaxseeds are wonderful; they contain lots of fiber and nutrients like omega-3, folate, vitamin B6, etc. Plus, the fiber content is so high, that the carb count is very low. One thing to be sure of is to grind them before use; that is the only way the nutritional value is absorbed by the body (I use a coffee grinder; a food processor will work, too). I eat cereal made with flax almost every day for breakfast. In fact, browse the recipe database; there are lots of uses for flax, like muffins and pancakes. You will grow to love the stuff!

| I put it both the lowcarb "fudge" recipes I have. I add it to my V-8 chili, and I've been known to use it in the crust of a lowcarb cheesecake. If I'm eating sweets, even l/c ones, I'm gonna get some fiber out of it!

| Im a newbie to the flaxseeds as well, really beginning to appreciate the healthful benefits and the taste is really great as well.

| I found my Cuisinart did not do a good job at grinding the flaxseeds. The little Braun coffee grinder beats it all to heck! Ammy, the flaxseed meal makes a nice little muffin or cake, too. Here's one version (about 2 servings): Melt 1 tbs of butter in a small bowl Add 1/8 cup Flaxseed meal + 1/8 cup almond meal (and, for a fluffier cake 1/8 cup Carbquik) Add 1/4 tbs of baking powder Add 1 large egg Add sweetener of choice to taste (say, 2 Splenda packets) Add 1-2 TBS of Da Vinci SF syrup or cream or water (you don't want the batter to be really thick, but it shouldn't be runny either) Mix well, Nuke for about 1 minute 15 seconds (more or less depending on your individual microwave). Turn it out onto a rack. It will seem a bit moist at first, but it dries a lot as it cools. I vary this all the time - sometimes I use more flaxseed and nut meal (up to 3/8 cup total) for 2 generous services.

| Whoa! In case Teel doesn't check this thread before someone makes this . . . yes, it is 1/4 TEASPOON. Would it explode in the micro with that much baking powder????? I make another version (Thanks Judy!): 1/4 cup flax seed meal 1/2 teaspoon baking powder 2 packets splenda big dash of cinnamon 1 egg Mix well and put in a small round micro-safe container sprayed with Pam. Nuke for 1 minutes.

yes, yes, yes! 1/4 teaspoon is what I meant to write. Although, I've used a half teaspoon - without ill effects - which is almost equal to a 1/4 tablespoon (2/12 vs 3/12). So, I don't think it would actually explode... really... :o

| I just tried the Flax O meal hot cereal. AWFUL.. what a waste of $20.00. I even added splenda and cinnamon which did nothing for the bad taste. I am a little bummed as I miss my oatmeal and was hoping this would be a good replacement. |

| Low Carb Success has hot flax cereals that I really like. The Butter Pecan is great, and so is the Cinnamon & Spice. They come in a gold resealable bag that you refrigerate after you open. It has taken the place of oatmeal for me, I look forward to having my hot cereal every morning. I use DaVinci's sugar free Vanilla syrup to sweeten and add 1 TB cream. It costs around $5-$7 for 14 oz. at my health food store. Shelley |

| I like this cereal, too, Shelley. You may find the following recipe cheaper, though: Mix equal parts Flax Seed Meal and Unprocessed Wheat Bran. Store in a baggie or container in the refrigerator or freezer. When making your cereal, measure 1/2 cup of the mix with a scant 1 cup water. Mix and nuke for a few minutes. You can also add 1/4 cup whey protein powder to an individual serving if you wish. There are several other flax seed-based cereal recipes in the recipe section too.

Mix together all dry ingredients in a bowl, then in a separate bowl, mix all wet ingredients. Fold dry ingredients into wet and mix well (don't beat like crazy, but be sure it's mixed well or the eggs do funny things!). Immediately transfer batter to Pam/etc-sprayed loaf pan bake at 325? for 35min. or until it passes the knife/toothpick/etc. test.
