Default Blue Cheese Cauli

Every day I add some crumbled blue cheese to my salad. Every day I see the recipe on the lid for "Crispy Blue Cheese Potatoes." So last night I tried it with cauliflower. I thought it was very good! (See my notes about adding more cheese at the end).

CAULIFLOWER WITH BLUE CHEESE

1 head of cauliflower
1 T olive oil (I used light)
1/8 t salt
1/8 t pepper
1/4 C crumbled blue cheese
8 oz. bacon, crisply cooked and chopped (I used 4 slices)
1/2 C shredded cheddar cheese

I cooked the cauli ala MMM (Marcie's Micro Method: cut in quarters, rinse and micro on high for 20 minutes). I was in a hurry so I didn't let the cauli cool. Might be a good idea to let it cool for a few minutes, lol.

Cut off chunks of the florets and place in a bowl. Take a spoon and break them up a little. You still want big chunks. Add the T of olive oil and stir to coat. Add the salt and pepper. Stir. I put the cauli in an 8 x 8 pyrex dish.

In another small bowl, mix up the blue cheese, cheddar cheese and chopped bacon. Spoon on top of the cauli.

Recipe says to bake at 400 until cheeses are melted. Since my cauli was already warm, I just put the dish in the micro on high for about 6 minutes.

When serving, because there is not a lot of cheese in this, the cauli was still loose. But it had a wonderful flavor with the olive oil and cheeses. DH's suggestion was MORE CHEESE!

Next time I make this I think I'll double the two cheeses and mix them and the bacon up with the cauli. The florets may hold together a little bit more then. But if you are counting calories, the original recipe was very good!

Per serving (if serving 4) of original recipe:
Calories: 178
Fat: 14 g
Carbs: 5.58
Fiber: 3.38
Net Carbs: 2.2
Protein: 9.38

Per serving if double both cheeses:
Calories: 265
Fat: 21.1 g
Carbs: 5.96
Fiber: 3.38
Net Carbs: 2.58
Protein: 14.7

Thanks, Marcie. I also like coating the cauli with the olive oil. Seems to add something to the dish. I tasted it before adding all the cheeses, and just the cauli, olive oil, salt and pepper was ~very~ good!
