| dil brought me 3 gals of blueberries. I have a few recipes, but I thought some of you might come up with some interesting uses for blueberries.

| My favorite is really simple, but it's just a single serving so may not do what you need right now! LOL! I fill up a custard cup with blueberries; nuke til they JUST start to get shiny. Add some DaVinci syrup to sweeten (I like the Dulce de Leche or Danish Pastry) or other Splenda-type sweetener to taste. Nuke JUST until the berries start to bubble. Top with either cream, whipped cream or full-fat yogurt. Boy is it GOOD! Somewhere I think I have a blueberry crisp recipe - if I can find it I'll post it. How about just freezing them for later? Pour into a single layer on a rimmed baking sheet, freeze til solid, then bag up in ziplocs - this way you can just pour out the quantity you want any time you want them! Char

| I make a sf jam from berries, Lou (blueberries, strawberries or raspberries, or a mix) that is pretty simple. I mash the fruit, add sweetener of choice, a squeeze of fresh lemon, and thicken with xanthan gum. No cooking or measuring, really, 'cause I do it all to taste. I store this in small plastic containers in the freezer. It tastes much like the sf jam you buy in the grocery, but MUCH cheaper and has no weird ingredients. I make this in a thinner version, too, and use it as a topping for lc cheesecake and flaxseed pancakes. I recommend using berry-flavored DaVinci syrups, if you have them, for part of the sweetener...really punches up the flavors. HTH,

| Here is my recipe for a great blueberry sauce. I use it on l/c pancakes or icecream. If your carb count would permit, it is also great spooned cold over some sliced fresh peach. La Vita Low Carb Blueberry Sauce ? cup Splenda 2/3 cup water 1 ? cups blueberries ? tsp grated lemon peel ? tsp cinnamon pinch of salt 1 tsp lemon juice 1 tsp xanthan gum or other low carb thickener Combine water and Splenda in small sauce pan over medium heat until dissolved. Add ? cup blueberries and bring to a boil. Mash or puree the blueberry mixture. Add lemon zest, salt and cinnamon, stir to combine. Add thickener and stir. Bring back to a boil. Add 1 cup blueberries and cook for 1 minute. Remove from heat. Add lemon juice, stir and let cool. May be served warm or cold. |
