    Default Leftover Muffins

    I made a batch of Ketogenics Apple Cinnamon muffins over the weekend. The taste was pretty good, but they were extremely dry.

    I have 10 muffins left over, and I hate to throw them out. There has to be somthing I can do with them. Any ideas?

    Hack 'em up and make bread pudding?

    Feed 'em to the birds outside....

    Make a trifle with the bread crumbs and SF butterscotch pudding....

    Slice and toast and spread with butter or cream cheese!

    Slice horizonally in thirds or fourths, then dip in some egg, cream, cinnamon, and vanilla, fry 'em up and serve with sf syrup and make *french toast muffins* ???

    Shel, that sounds good! And Char's idea of bread pudding was my first thought.

    Tear up a muffin into chunks, nuke a 30 seconds or so and top with whipped cream or just some heavy cream.

    Bread pudding, Char!! Just the ticket!
    I have made those muffins, ShelleyLG, and they are dry, sawdusty things. Make a bread pudding by cutting them into 1/2 inch cubes, and making a royale, which is 2 eggs to every cup of heavy cream or whatever dairy you use. Sweeten to taste, and add vanilla and cinnamon (since these are apple-cinnamon muffins), put the cubes in a buttered baking dish, pour the royale over, let it soak for 15 minutes or so, and bake at 350 until a knife inserted in the center comes out clean. Yum!!
