Default Chicken and Mushroom Crepes

I got this recipe from a friend, she served it at a party at her home. OMG!! It is so good! She said it was an old family recipe that she low carbed.

Chicken and Mushroom Crepes

Crepes:
2 tablespoons butter, melted
1/2 tsp salt
3 eggs
1/3 cup Carbquik
1 1/2 cups half and half
About 3 hours before serving: Place ingredients except Carbquik into blender and turn on. Sprinkle CQ into blender and blend well; cover and refrigerate at least 2 hours. Cook crepe batter 1/4 cup at a time and stack with waxed paper.

Chicken filling:
butter or margarine
1 cup chicken broth
2 egg yolks
1 cup shredded swiss cheese
chopped parsley
1 lb mushrooms sliced
1/2 cup Carbquik
1/4 cup dry sherry
half and half
3 cups diced cooked chicken

In a 3 qt. saucepan over medium heat, in 2 tbsp butter, cook mushrooms; remove to bowl.

In same pan melt 4 tbsp butter, stir in Carbquik. In bowl mix broth, sherry, yolks and 1 cup half and half, stir into CQ mixture and cook until thickened. Stir in cheese.

Preheat oven to 325?. Set aside 1/2 cup of the sauce. Add chicken and all but /14 cup mushrooms to remaining sauce and heat through.

Spoon 1/3 cup filling onto a crepe and roll up. Place crepe in 13X9 baking dish. Repeat.

Stir 2 tbsp. milk and mushrooms into reserved sauce, pour over crepes.

Bake 20 minutes. Top with parsley.
Makes 6 servings.

I haven't made it myself yet, I just ate it at my friends house, but it is heavenly.
