Default Tomato Cream Sauce

Last week I remembered a great recipe for a tomato cream sauce that I had not made since I started this WOE. I was able to make it l/c friendly by replacing sugar with splenda and flour with Thick n Thin and a slight alteration in preparation technique. It works well with any seafood. Last night I sauteed 2 lbs of shrimp in butter, olive oil, and minced garlic, until almost done, then added the shrimp to the sauce to finish. I served it over Dreamfields linguini. However, I think it would also be great over cauliflower rice. It will make a regular appearance in my menu planning.

Tomato Cream Sauce

1 large can diced tomatoes
1 small can tomato sauce
1/2 green pepper, diced
1 medium onion, diced
3 stalks of celery, diced
1 Tbls Italian seasoning
crushed red pepper to taste
2 Tbls sugar equivalent Splenda
1 Tbls Thick n Thin
1 cup sour cream

Put all ingredients, except the Thick n Thin and sour cream, in a large sauce pan. Bring to a boil, reduce heat and simmer for about 30 minutes, until celery is tender. Stir in Thick n Thin to thicken. Add sour cream and stir. Heat and serve over seafood, or add cooked seafood to the sauce.

Figuring 4 oz of shrimp per serving, the recipe will make 8 servings with a lot of sauce per serving, probably a lot more sauce than needed when serving over pasta. I expect that I could put another pound of shrimp in the pot and have 12 nice servings.

Bumping this for Alida. This is the recipe for using 2 pounds of shrimp. It is the base recipe I used for the pot luck.

Oh Henry, thank you so much! Everyone . . . I met Henry last night and he's a great guy! He is tall, handsome and SLIM! We had a wonderful time at his home with his lovely wife, Jan, Barb (BKLoots) and Rhonda (TexanFlowr). And this recipe is absolutely delicious. I have to encourage everyone to try it. Last night was also the first time I had Dreamfields and it is delicious. And the 2 oz. serving size seemed like a lot of pasta to me . . . very filling. He also treated us to a new Truffle recipe. Watch for that recipe! Thank you, Henry!

Henry, I made this last night. Delicious! I could not find the Linguini, but I did find Dreamfields Spaghetti at my local Super Target. Thanks for those coupons . . . wish I would have taken a few more! My DH bought "light" sour cream instead of the full fat variety. I could tell the difference, but still excellent. This sauce actually would work without the shrimp, too. Hearty enough to stand on its own. My husband said he thought he was eating at a restaurant! Nah . . . he was just thrilled I was actually cooking a meal because he normally does the cooking. I come out on holidays.
