Gammon Steak

Default Gammon Steak

Gammon steak was buy one get one free so I bought some for the first time since starting this woe. It is high in sodium so I have been avoiding it but at 100 calories per 100g and 0 carbs it makes a nice change sometime.

So for dinner tonight I had gammon steak with eggs fried in macademia nut oil and salad, It was lovely.

Huh! I never heard that term before. Does it come from the French word for ham, "jambon"? (the only French I know is Kitchen French: food names and swear words. )

That meal looks yummy, BTW.

I guess it is ham as it all comes from the same animal, however, we refer to gammon as the salted version. You can buy it in joints and have to soak it in water overnight or in ready to cook steaks like I did.

We call the salted version, country hams, they're the traditional hams that date back to the days before refrigeration. The hams are cured by soaking in a salt water brine and then smoked to preserve them.

Some people say you need to soak your country ham for about 6 to 12 hours, others say about 2 to 3 days, I usually split the difference and soak it 24 hours in the frig.

A friend of my husbands has family that lives in North Carolina, when he comes home from a visit he always brings my husband several slices of his family's home made country ham. My husband loves the stuff, I don't like it. I cook it for my husband but the kids and I eat something else.

Ahh, you gotta admit my dinner looked yummy though?

I am going to have the other piece today, not sure how I quite fancy incorporating it into a dish so will post when I think of something.

Any suggestions? Was thinking of chopping it up and maybe with brocolli.

Ham with cauli mash is one of my favorite combinations. I use Marcie's recipe from the Articles section (although, I vary mine by using 1 head of cauliflower, 2 oz of cream cheese, 2 oz of brie, and I mix it with a stick blender instead of in a food processor).

Here is a recipe from a low-carb cooking show (Blaine's Low Carb Kitchen) that I saw last night. I have not tried it yet. However, it does look interesting and I suspect it will work well with Gammon and should also be low in calories.

Zucchini Hash

2 medium zucchini (approximately 3 cups cooked - 4 cups raw) - peeled and chopped in 1/2 inch pieces
1 medium onion peeled and chopped (approximately 1 cup cooked)
1 cup ham - diced
Kosher salt
Fresh cracked pepper
Paprika
4 tablespoons butter

Preheat 10" saute pan to medium high heat. Put 1 tablespoon of butter in pan and brown ham 2-3 minutes. Add zucchini and onion and rest of butter and cook for 8-10 minutes stir occasionally with wood spoon (hash should be well browned). Season hash with salt and pepper and paprika. Serve with favorite egg dish.

Yields 6 servings - approximately 3 net carbs per serving

They both look great, unfortunately I have no zucchini, will try next time, I also have no cheese apart from some parmesan. Have an idea in mind though check back later.

Your dinner looks wonderful! I love ham and eggs. I just don't care for the taste of country ham, the flavor is just too strong for me.

Sweet and Sour ham with stir fry vegetables is really good.

Just stir fry the veggies, when they're done add the chopped ham and heat through. Then add some soy sauce, a little sugar free vanilla syrup, a small spoon of tomato paste, some chopped garlic, a pinch of red pepper flakes, a pinch of ground ginger, a splash of vinegar and thicken it with whatever you like to use. I make this a lot with with different kinds of meat.
