| I was really wanting an egg custard which made with a sugar free vanilla syrup would be low carb. And, I had to have it quick to prepare. Put a bit of butter in a small non-stick skillet heat. Mix together 2 eggs, 2 - 4 Tblsp 1/2 n' 1/2, dash of cinnamon and nutmeg and Sugarfree vanilla syrup, Torani's or Davinci, like scrambled eggs. Cook in butter till soft cooked, not dry. Very much like custard and it only takes about 3 min. from start to finish. This morning I added blueberries, about 12 berries. Mmmmmmmm |

| That sounds similar to something I do that I call "French Toast Pancakes" Here's my recipe... Beat 1-2 eggs with a little vanilla extract (or sugar free syrup) and blend with 3-4 oz. soft cream cheese. Add a pinch of salt and sweetener to taste. Melt butter in a skillet, pour batter into pan in dollar-size pancake shapes. Fry for 2-3 minutes, flip and finish cooking for 2-3 more minutes. Blot on paper towels if they are too buttery/greasy. Top with sf jam, maple syrup, etc.

| Bless you guys. I'm on day three of Induction and I'm about to get ill at the thought of ANOTHER morning of reg. scrambled or over easy eggs. I will be shopping tomorrow. I will pick up the ingrediants to make both of these, although I can't have fruit yet. Anything to mask the flavor of the eggs. |

| :cook:Oooh, well I'm gonna try that one soon, you betcha! Here's another alternative to plain eggs for brekky. Faxseed meal is legal for Induction , so here is another option: Code: Microwave Minute Muffinn with Flax
In a tea cup,
Melt 1 or 2 tsp of butter (microwave for 5-10 seconds*)
Mix in 1/4 cup of flaxseed meal
1/4 tsp of baking powder
1 egg (a medium size egg, if possible)
Sweetener to taste (i.e., 1-2 packets of Splenda or 1 TBS of SF syrup)
Dash of cinnamon, if desired
Microwave on high for 1 minute*
Turn out and let cool
The muffin may look kind of wet at first, but it dries quickly as it cools.
Eat warm with butter or wrap cooled muffin in plastic to eat later.
*cooking time may vary depending on your microwave, avoid overcooking

| something new to try breakfast quiche Oh I had fun making this this past weekend: 1/2 package of chopped spinach defrosted and water expressed out 5 slices bacon cooked and crumbled 1 can mushroms 3/4 onion sliced, and sauted in bacon grease 1-1/2 cups cheese (any kind you like - swiss, cheddar, combo) 3 eggs 2 cups combo of milk, 1/2 and 1/2, cream (i used all 1/2 and 1/2) salt, pepper and a pinch of paprika (of course you can add any kind of spices you like, cayanne, etc. al) I put a little spinach down in (about 1 tbs) each muffin cup (sprayed with pam first) (I have a 12 muffin pan and made 12) after the spinach I put in mushrooms, then the onions, then the bacon, then the cheese. I wisked the egg/milk/spices together and poured a little in each cup, they were pretty full when I was done, baked at 350 degrees for about 20 minutes, check with putting in a knife towards the edge, if comes out clean, pull out and let cool, will continue to cook for about 15 minutes, then center will then gel. oh these were wonderful this morning for breakfast, 2 of them 4.6 carbs, 16 protien, 25.6 fat, 308 calories (best I could figure) enjoy all, I have a whole weeks worth in the freezer c

| Some great ideas here! I know I will try the Flax muffin and the Breakfast quiche. Both sound delightful. I really like quiche and this sounds great. I make a quiche scramble for a quick breakfast. 2 eggs about 2 tablespoons 1/2 n' 1/2 1 tablespoon butter 1/2 cup of frozen chopped broccoli some shredded swiss cheese to taste With a fork mix the eggs and 1/2 n' 1/2 with salt and pepper. Heat 1 tablespoon butter in small skillet and chopped broccoli and saute till hot and thawed. Add egg mixture and cheese. Cook stirring till eggs are cooked to desired doneness. Dump on a plate and enjoy. This might take 5 minutes.

| Does anyone know the carb count for the french toast pancakes, i added a dash of cinnamon to the batter and i ate it plain next time i will put sf maple syrup if i can find a good one...thanks so much for this recipe it is so good... even my boyfriend loved them and he is a low carber...thanks again sheryl
