April, I have never tried to freeze it. I suspect that it would probably turn to mush when thawed out. What I do, is plan my weekly menu's so that if I am going to make it, it will work with several meals. I has kept well in the refrigerator for up to 1 week. I only make it using 1 head of cauliflower, so that limits the number of servings to a manageable amount. Another thing I will do is make changes to the finished product during the week. For example, I might start with a plain rice-a-flower, then reheat it with some sauteed mushrooms, diced onion, and curry powder to have "curried rice pilaf". That is one of my favorite ways to use the rice-a-flower.

I have a leftover container of a rice-a-flower-type dish. I'll throw it in the freezer and see how it is tomorrow.

rice-a-flower is a shredded cauliflower dish that is a substitute for rice.

ok now I understand... I just like cauliflower as it is, raw, cooked, steamed, boiled, etc. al... never made the mock potatoes, and probably won't make rice-a-flower....

Oh Carolyn, you have no idea what you're missing. You should just try it once and if you're not hooked...then it's not for you. The first time I had it though was at TGIF's and I asked them what was in it and all they had in their mashed cauli was onion & garlic powder and salt. AND I was not a cauli lover. So you liking cauli might add a new staple to your diet! (Remember: Green Eggs and Ham )

ok, I'm kind of slow. You shred the cauliflower and then you can steam it for pretend rice or fry it for pretend fried rice, etc? I might have to try this! pls lemme know. is it that simple?

Heather, the way I do it is run the cauliflower through the shredding disc of a food processor, then put the shredded cauliflower in a casserole dish with 6 Tbls of water, cover with plastic wrap and microwave on high for 8 minutes, stirring after 4 minutes. (As microwaves have different strengths, you might want to check the "rice" after 6 minutes to make sure it does not overcook.) The rice-a-flower should be crisp/tender (not mushy). I then drain the water and it is ready to serve plain, or use to make other recipes, like fried rice, or my favorite curried rice pilaf.

Carolyn,
I am kind of *conservative* when I make cauli mash. I didn't know if I would like it, but I do, and now folks at work always want to try my *mashed fauxtatoes*.
Here's what I do:
cook fresh cauli flowerettes...I do NOT use any of the stock/stem
put the cauli in a blender, process until almost mashed potatoe consistency.
Then I add a couple Tablespoons of cream cheese and a tsp of butter buds. Process again until like mashed potatoes. I swear you canNOT tell the difference! YUMMY!

I tried rice-a-flower for the very first time last night. It was awesome, and now I'm digging out all of my pre-LC recipes that have rice and planning to have it frequently.

Hmmm.... I guess I lost my post yesterday on how the frozen leftover caul-rice dish turned out. It was fine, but I was careful not to over cook it the first night. After freezing-thawing-heating it was a bit softer, but not mushy. Again, I was careful not to overdo it when reheating. The recipe I used was Dana Carpenter's "delux" cauli-rice.

So, April-Rose, I say go for it -- make up that double batch and freeze half of it for another meal. It should be fine.
