Default French Salad Dressing

When I got married a lot of years ago, my wife brought with her, in lieu of a dowery, a number of recipes. One of those was for a salad dressing that we used all the time on spinach salads and taco salads. It is a sweet french style dressing. We stopped using the recipe 25 years ago when we went on a low fat diet. With my new WOE, I was able to make the recipe low carb and have been using it for the last 2 years. It is very simple.

1 medium onion
1/4 cup red wine vinegar
1/3 cup low carb ketchup
1/2 cup Splenda (or liquid Splenda = to 1/2 cup sugar)
1 Tbls Worcestershire sauce
1 cup canola oil

Place all ingredients in a blender, except for the oil, and puree until smooth. With the blender running on high, slowly drizzel the oil into the mixture to create an emulsion. Store in a covered container in the refrigerator. (It holds up real well for up to 4 weeks. If the oil starts to separate, simple stir back in with a spoon before using.)

Sounds great, Henry! (and, a Happy Birthday to you! )

I would imagine that extra light olive oil would also work well in this recipe since it doesn't have much taste.

One of my favorite high carb chicken recipes called for a dressing made with whole cranberries, french dressing, and onion soup mix. Im wondering if this would work to give that same yummy flaver.. Of course onion soup mix has too many carbs too...alas. It was an idea.

I make homemade cranberry sauce with Splenda JUST for that recipe - the onion soup mix, split up amongst the many servings, really isn't that bad. I also have a homemade version of the French salad dressing that I use.

Somewhere on here I posted that recipe as a crockpot version a couple years ago...Cranberry Crockpot Chicken I think. Mmm, gonna have to make that again soon! Thanks for the reminder!

I bought all the ingredients today and have it in the oven. This is more cranberries than I usually use for that amount of dressing. I put em all in anyway, so I'll know soon how it tastes. I used white wine vinegar instead of just white; hopefully will taste as good.

Henry, thanks for another great recipe! Oh, please remember to post (or bump up) that recipe you used for the crackers at our Pot Luck. Those were really tasty and crunchy. And I loved your smiley face presentation!
