| ideas, suggestions, OMG DON'T DO THIS tips - anyone?? I'm most interested in what to add to the meat to keep the loaf moist (cause saw dust loaf is SO yummy, right??) things I don't want to add pork rinds (they make me yak) or tomato sauce outside of that I'm WIDE open for suggestions

| April - ground flax seed gives meatloaf a nice texture. When I've made turkey meatloaf I've added 1/2 pound of ground pork per pound of turkey. |

| How about making and adding in some fresh cranberry sauce? I made some the other day using Splenda. Also may be some Jack or Mozzarella cheese crumbles. Oh and don't forget some crushed garlic. hehe

| Yup. All of the above: Egg, crumbled or grated cheese, garlic (!) & flax meal. Maybe add some finely diced veggies like peppers (red & green) & onion.

| I use: egg, Worcestershire sauce, a dash of heavy cream, wheat bran or crushed rinds (sorry!) or flax meal or a combo of the above, chopped onion, dried oregano and freshly ground pepper, garlic salt, and usually a couple handsful of grated cheese. I also use 2 pounds of ground beef and 1 of lean ground pork. Don't overmix either, it toughens up the meat and makes it dry! I lightly mix everything together, shape it into a big oval (I don't use a loaf pan - I like it crusty all over the top surface) and roast at 350* til done, about an hour and a half. Overcooking dries it out too! We love meatloaf.... Char

| This sounds pretty good. I have never tried it but I think I will. Spinach Turkey Meat Loaf 1 lb. ground turkey meat 1 egg 1 slice low carb bread 1 1/2 tbsp heavy cream 1/4 medium onion, finely chopped 6 med. mushrooms, sliced 1 tbsp. worchestershire sauce Salt and pepper to taste 1/2 pkg. frozen leaf spinach, defrosted sliced cheese, approx. 3 slices Tear bread into small pieces; put in large mixing bowl, add cream and egg. Add all ingredients except spinach, cheese and turkey meat. Mix well. Slowly add turkey meat until thoroughly mixed. Roll out turkey meat on wax paper keeping width to 8 inches and thickness to about 1/2 inch. Add a layer of spinach then a layer of cheese. Using wax paper roll meat into an 8 inch log. Gently place in loaf pan. Cook in oven 350?F for 30 minutes or until done. Serves 6 Nutrition info per serving according to Master Cook: 12 g. fat, 21 g. protein, 6 g carb, 2 g fiber. here is another variation on the same theme. http://www.cooks.com/rec/doc/0,1839,...246198,00.html

| I use heavy cream, eggs and parmasean cheese. I also saute the veggies and cool before adding to the meat. |

| I've found that ground turkey tends to be really dry when it's the breast (white) meat only. I look for rolls that are mixed or if I'm buying from the meat counter, I buy half white and half dark and mix them together. Quite frankly, all-white meat has lost its charm for me: it's dry as all get out and tastes like sawdust as you pointed out. I'd much rather eat the fattier parts (which actually taste good) these days. It's been a while since I've made turkey loaf and the above suggestions sound terrific. I'm going to have to try using the flax meal instead of pork rinds as that sounds like a great idea.

| So, how did it work out? I'm curious because I gave up on ground turkey... it always seemed to be kind of tough when I used it in the past. Maybe I was overcooking it?

| I had totally forgotten my turkey loaf recipe, and it is so delicious! It calls for bread crumbs but you can substitute something you come up with, or make them out of low carb bread... here is the recipe turkey Loaf 3 C. ground turkey 2 c. bread crumbs 1/2 c. minced celery 2 chopped pimentoes 1 1/2 tsp salt 1/4 tsp. pepper 1 T. grated onion 1 T. lemon juice 2 tsp. worcheshire sauce 1 T. minced parsley 2 C. chicken broth 3 eggs, slightly beaten preheat oven to 350 degrees. In large bowl combine all but the broth and eggs. Mix well, and add broth and eggs together. dump into a lightly greased pan. Pack mix in firmly. Set the pan into a larger pan with water coming up about half way on the pan with your meatloaf. Bake 1 hour.

| That recipe sounds great, Lou. You could also try a trick I use when making chicken sausage, turkey burgers or ground venison anything: I have a little meat grinder attachment on my KitchenAid mixer, and I grind up bacon and mix it in (about two slices per pound of meat). I also lay slices of bacon over the top while baking the meatloaf. Adds flavor and moistness. If you don't have a grinder, chopping really small will work. Try freezing the bacon first; it makes it easier to chop. HTH,

| Thank you all!!! Well as so often happens here I took a bit of everyone's advise, what was on hand and used comment sense yes, I have some, thank you {{{rim*shot}}} I chopped and saut?ed onions and mushrooms I use Ezekiel bread when I do use bread, so made crumbs from that (about half a cup, if that, just enough to bind the meat and stuff) heavy cream, a plop eggs roasted garlic, fresh rosemary and basil Mrs. Dash and sea salt I let this sit (while I change out of work clothes!!) so the flavors can marry (I now pronounce you meatloaf) Then cook. a GREAT tip I got from Julia Child is to take a teeny bit of your meat mix and fry it up - this gives you a preview of what the finished product will taste like. This has helped me keep from making some of the awful mistakes I USED to make. (seriously, you have to worry about your meat loaf when even the dog turns his nose up at it!!) THANK YOU EVERYBODY!!!
