Default Vickie's Pumpkin Muffin Thingy

Here's the recipe for my "Pumpkin Muffin Thingy" It might be slightly different from the original one I put in my journal because I have been eating it every day and adjusting the recipe until it's just right. This really hits the spot for me.


1/3 cup canned pumpkin
2 large eggs

2 tablespoons SF dulce de leche syrup( or whatever sweetener you want to use...I just prefer the syrups. It's also good with vanilla syrup)

1 tablespoon Cream cheese ( I keep my cream cheese in little 1 oz squares. I cut one of these in half and then cut one of the halves into a bunch of tiny little squares so each bite has some cream cheese in it)

1 teaspoon cinnamon ( I like alot of cinnamon)

Process all ingredients except cream cheese in bullett blender. Pour into a greased microwavable bowl ( I use the 2 cup size round gladware container sprayed with cooking oil spray), drop cream cheese into mixture in very small pieces, spaced so you get some cheese in each bite, and microwave on full power for 5 to 6 minutes. Cooked for a shorter time it is more of a custard type thing and cooked longer it becomes more breadlike.

makes 1 serving at 232 calories 10 gms total carbs 4 gms fiber for a net carb count of 6

yum! i have been jonesing for muffins for some reason all of a sudden lately... hafta try THIS!
*DISCLAIMER* kim is not a cook... nor does she play one on tv..
so... the QUESTION is... can you use PUMPKIN SPICE (if there truly IS such an animal... (refer to the disclaimer) and if you CAN... would you use it in PLACE of pumpkin spice (if there truly is such an animal) or in addition?

i love love LOVE pumpkin pie... but only if it is spicy... not as in chipotle spicy or waSAbi spicy (although kim is not entirely opposed to the idea of those!)
and i THOUGHT that it was because of the pumpkin spice added... (see disclaimer)

any help can and will be used against you in a court of law...

Kim...I actually bought Pumpkin Pie spice yesterday and added it to mine this morning...it was really good. I used about 1/2 tsp...and I still used the cinnamon because I like alot of cinnamon. You do not have to be a cook to do this one at all...it is soooo easy. And, if you like pumkin pie you will probably like this. It's really similar. I hope you like it...but if you don't, PLEASE go easy on me...LOL (I'm thinking about your reaction to the mock danish...if you hate it THAT much I might just hide under a chair!)

I'm thinking that's the As Seen On TV Magic Bullet. My friend's 12-year old daughter insisted it was the best kitchen gadget ever and pursuaded me to buy one. I'm guessing that she is refering to the "Magic Bullet" Blender. I've got one too. They are awesome for these kinds of things. I can make SF pudding in about 1 minute from opening the box to putting the jar in the fridge. I just bought some pumpkin today. Gonna try this tonight.

Edit: TeelBee beat me! You can buy them 2 for 1 on the website and give one as a Christmas present. That's how we got ours.

That looks really cool. I'm going to have to show it to DH. He's a worse kitchen gadget junky than I am, and if he can find a place for it to live, we may just get one

Neato! We just made about 6 batches of this. We added some extra cream cheese for the last batch. Incredibly easy to make. Yup, the "bullet" makes it very easy. We made 2 batches per load in the bullet.

Hey. Hey..the gang's all here! I am so glad that those of you who have tried my pumpkin thingy have seemed to like it as much as I do. You're right, Teelbee & Tom...I a was referring to the Magic Bullet blender. I got mine when they were $99 each (before they started the 2 for 1 deal) and it has been worth every penny. I use it several times a day...I honestly use it for one thing or another every time I cook. I've seen them advertised at Walgreens drug store for $59.95. That may be the one without the blender/juicer attachment...but I really have never used that part of it. I basically use the 2 different size mixing cups....that's all I have ever needed to use.

as for the magic bullet... daughter2 and i saw it on tv a couple years ago in a motel on our way outta town.... or was it just last year? hmmmmmm anywho.. we BOTH said we HAD to get one... then forgot about it and never ordered one..

Kim...was it that awful infomercial with the cutesy lil thing in the sundress and the guy...and they are making all this different food for the people? That's the one we saw...and continue to see if we happen to leave the TV on all night....we had to have it too....Obnoxius infomercial...great lil appliance...LOL
