Question: "Breading" for fried foods

"Low Carb Cooking" at Low Carb Diet Support: "Does anybody know of a "breading" for fried foods that really works? I tried a combo of ground pork rinds, almond flour and parmesan cheese but it doesn't really work well. It doesn't stick to ...."

Does anybody know of a "breading" for fried foods that really works? I tried a combo of ground pork rinds, almond flour and parmesan cheese but it doesn't really work well. It doesn't stick to the food very well and it just made it feel greasy...any suggestions?

Soy flour works pretty well. I do just parmesan cheese if I'm going to oven bake, and dip the item in egg first so that it sticks well. I don't do breaded/fried very often. I mostly do breaded/oven fried since I'm too lazy to stand and stare at my food for too long

I find that a drench in egg whites then dredge in the parmasian/almond flour/seasonings sticks well. It also helps if you have a proper deep fryer. Correct temperture is the key. The coating sets almost immediately when you drop it in the hot oil. The tricky bit, especially with fish and chicken, is doing small pieces and small batches that will cook through before the nut coating burns. Chicken nugget size rather than whole breasts or filets.

Vickie, depending on what you're frying, unsweetened coconut works great for a lot of things. I've done fish, shrimp, chicken and all were wonderful. It doesn't have a strong coconut taste like you might think.

First, use an egg wash and then roll your item in the coconut and fry. You can always find this at your local HFS, it's grated and has a fine texture, unlike the shredded-sweetened coconut.

Just parmesan works great for fried chicken and zucchini.

Unsweetened coconut is excellent for seafood. My favs are shrimp and catfish fingers. Use the small shredded coconut or the grated coconut used for making macaroons.

I've tried many combos of things over the past 3 years.

My current fave is to use half a bag of dry Atkins cornbread mix, about 1/2 a cup of Carbquik, and 1/2 a cup of Parmesan cheese. You can season it if you want to.

I always dip my foods to be fried in beaten egg wash or just beaten egg white first though, to help the coating stick.

That mixture with catfish is just excellent! DH often requests it. I take the other half of the Atkins corn muffin mix and mix it with an egg, a tablespoon of oil, and enough water or cream to make a thick batter, and sometimes I put a little chopped jalapeno or sliced green onion in it, then drop the batter by small scoops into the hot oil for hush puppies. Add some LC coleslaw and you've got a Southern plate of YUM!

Thanks so much for all the suggestions. I think I see where I made my mistakes. I used mayo, not eggs to dip in first...and my oil was most likely not hot enough. I'm going to try again taking all these suggestions into account....thanks again

Thanks for the ideas!

After a dip in the egg, my favorite "breading" was Bob's Red Mill LC Baking Mix plus an equal amount of whole almond flour. I cannot find the Bob's Red Mill in stores now, so I've been experimenting with other coatings. Have not yet hit on a mix that "stuck" as well to chicken. I'll be trying some of these alternatives.

Teel, I shop at Kroger here in Texas and they carry a full line of Bob's. I don't know if they have the LC Baking Mix, but I can check next time. Kroger is one of a large "family" of stores. You can go to Kroger.com and there is a place to find the names of the other stores.....they may carry the Bob's Red Mill products.

I know Noel lives in Denver and it's King Sooper's there. It's called Fry's somewhere else. Fry's here is an electronic/appliance store!

I'm pretty sure that there is a Kroger variation in your area, Teel... AND they will special order! They are Fred Meyer in parts of Washington, and they were wonderful about placing special orders to get in LC products for me.

Yeah, Fry's here used to be a supermarket, but the kids changed it to electronics. I went to the Kroger.com and searched for stores in my area - numerous Quik Stop stores were returned (they are like a 7-11), but no major markets. Even Whole Foods didn't carry the BRM LC bake mix anymore. I guess I could probably buy it at netrition.com next time I make an online order.
