| Well, I was fooling around with some of the brandy & rum left over from my purchases made for the killer eggnog. I remembered these uncooked nut thingies that my mother used to make. She called them "brandy balls" and they were essentially nuts, crushed cookies and brandy, rolled into little balls. Herewith, what happened this evening: 1 cup walnuts 1/2 cup pecans 1/4 cup almond flour 1/4 cup granulated erythritol * 2 TB oat fiber ** 1/4 cup cocoa All this goes into a food processor and, first pulsing, then running, grind them all together. Then add, through the shoot: 2 TB rum 2 TB brandy (to which a squirt of liquid splenda is added) When it gloms up into a ball, turn off. Then pull out little pieces - about a TB - compress a bit in the hollows of your palms, and roll into balls, setting them on a tray lined with Reynolds Release (special non-sticky aluminum foil - but I bet regular would work fine too. I was just being paranoid.) Then mix up: 2 TB powdered erythritol* 2 TB unsweetened coconut and roll each ball in the mixture. I found this worked best if I picked up a handful of the coating, threw in a ball and rolled the coconut onto the ball between my palms. Put back on the tray to dry out a bit and then save in a cookie tin. You'll have leftover sweetened coconut. (Add it to your current batch of cereal mix ... well that's what I did. )I got 21 little truffle thingies about 1 inch in diameter. Each has: Calories: 72 Fat: 6.5 gms Sat. Fat: .5 Carbs: 3 Fiber: 2 Protein: 1.5 These are good little suckers, which is why I posted them. | OOoooo boy do THOSE sound YUMMY!! I may have to delve into that realm this weekend! I just got some SF white chocolate chunks, milk chocolate chunks, and dark chocolate little chips so I am ITCHIN' to play. I am gonna make peanut butter/white chocolate chunk cookies for sure. (DH is salivating already.) Prolly some of our "experimental" fudge from a couple years ago. And perhaps THESE too! Thanks Mags! Char

| ... and I think these would be good without the cocoa - maybe adding a bit more oat fiber or some protein isolate of one kind or another and maybe a bit of cinnamon or something, relying on the nuts and boozes to carry the day.

| Maggie, these thingys sound wonderful! And I didn't know powdered Erythritol was available! I'm done baking for this wave. However, I might try these for the next wave, out of town guests for New Year's. Thanks!

| I found oat fiber at Netrition. Haven't used it much, but now I have a usable recipe. Thanks, Maggie.
