They are pretty easy to make, my grandma taught me to make them when I was a Girl Guide, I just adapted the recipie for a low carb lifestyle. I used to make them whenever we had a cake stall to raise money, they always went really quickly!

Ingredients

* 5 egg whites, at room temperature
* 1/2 cup granular sugar substitute
* 1/2 cup vanilla Davinci
* 1/2 teaspoon almond extract
* 1/4 teaspoon salt
* 2.5 cups grated unsweetened coconut
* 2 tablespoons ground almond


1. Heat oven to 325F. Spray two baking sheets with oil spray.
2. With an electric mixer on medium speed, beat egg whites until medium peaks form.
3. Combine coconut, sugar substitute, almond flour and salt in mixing bowl.
4. Stir in beaten egg whites, then DaVinci and almond extract; mix well.
5. Using palms of hands roll into balls, makes about 15.
6. Place on greased baking trays for about 10-12 minutes, watch them closely as they burn easily.

You might need to play with the liquids vs. the dry ingredients to get to a consistency you like. Sometimes I replace the DaVinci with coconut milk, other times, especially if I am making them for a party, I use Vodka or Rum.

Thanks! I like them anyway! They are lovely and moist if you don't overcook them, plus the almond taste comes through without being too overpowering. Let's not mention the rum ones though! They are ACE. Don't do them too often though, hard to resist.

Those sound great! I've made the ones at low carb luxury and they were good, but I'm going to give yours a try. My DH loves them, and cookies are the thing that he misses the most on LC.

I haven't, but I'll try making them over the weekend. I ended up making a LC coconut pie for DH, because he kept hinting (okay... he was nagging) that he wanted some.

Made the macaroons over the weekend and they were very good. I used coconut milk and vanilla extract instead of the DaVinci syrup and it worked great.
