Not many corn dogs in NYC. Just a long too boiled frank, plucked from it's briny bath and planted in a carbiferous holder. (To be eaten while blindly walking past the guys with "designer hanbags", cheap rolexes and skyline prints. ) When I move here and became a born again redneck, I learned to make macaroni with cheese (better than my neighbors ... ), but that was my limit.

... but *** gasp *** NO MONTY PYTHON? How can one evaluate the absurdity of life without, well ... say, the saga of the dead parrot? How would one know that one came here for an argument and not abuse? How to evalute a silly walk? Can one live without knowing that raison d'etre is the breakfast cereal of philosophers?

I cannot even imagine!

OK. Now, for something completely different ... the last topic on this corn bran thread.

Back to a delicacy of the American heartland ... the "corn dog."

Ladies, corn dogs were invented right here in Texas, at the State Fair, so the legend goes. I might just have to try to make some. After all, that 5 lbs of corn bran is going to last a long, long time. If it works, I'll let ya know.

I'll chime in here - corn bran, sounds awesome. Corn dogs - love them, let me know if this works. Cornbread - huge weakness for me, if this is a decent sub, then I'm all over it. Monty Python - I HAVE seen it but I just don't like it. So in my opinion, Kim, you're not missing much Now what I'm wondering is if corn bran could somehow be used to make lc corn tortillas - something I've never found. Any thoughts?

LOL Eddie! I was starting to get scared here... I too have seen Monty Python and don't like it, but I would never have admitted it if you hadn't done it first!

I was thinking that it could be mixed with carbquik to make a masa like substance to make tamales with, but at the very least you could add some to some carbquik (or other) pancake batter and make corn flavored crepes. That would make some pretty darned good enchiladas!

one of the things i love about this forum... is how when one person mentions one idea... sooooo so many others spring from it..

corn flavored crepes...hmmmm FRIED might work as a corn tortilla? ya think?

Oh, now you've got my brain working. When I was little, my mama made corn meal pancakes. They were so good! I just might have to make some for supper. Haven't decided if I'll mix the corn bran with flaxseed meal, vital wheat gluten, protein powder, almond meal, or my Carbsense bake mix, or my Carbquik. Oh, decisions, decisions. Wish I could make one of each, but I'm afraid I'd eat them all, and that would be way too many carbs.

I tried making corn dogs. Beat 3 eggs, added 3 Tbs soy flour and 2 Tbs corn bran, a pinch of baking powder, salt, mixed it all up, dried the dogs with a paper towel, rolled in the batter, and deep fried. They weren't bad. Next time I will add more corn bran and less soy flour. Need a cornier taste. DH liked them.

I made corn cakes, using the 1-min muffin recipe, doubled, with 1/2 flaxseed meal and 1/2 corn bran, and 3 eggs, cooked them like pancakes. Had them with sausage patties and lc maple syrup. DH liked them, too.

You're welcome, Katie. I grew up experimenting. I guess that's the talent I inherited from my mama. Certainly didn't get the art or the sewing talent!

This stuff might work for masa, if mixed with soy or vital wheat gluten. I have a tamale recipe; of course, it makes a gazillion tamales. I'll try to pare it down, and make a handful as an experiment. But I'll have to get the recipe, and then go buy all the stuff. I've never made tamales, but they are my absolute favorite Mexican dish. When I was suffering a corn allergy, I couldn't have them. I went lowcarb at that time, specifically because of the allergy, and lost weight. Still don't know why I went off. This time it's just so much easier, with DH's support. He's lost 40 lbs and feels much better, too. We just don't get as sick as we used to.

Having the support of your DH is so HUGE. I absolutely could not do this or at least not as well or easily if my DH wasn't doing it too. I don't have a problem making an extra side dish for the kids, but it would kill me if I was the only person in the house not getting to eat whatever it is.

I made a pan of "cornbread", using 1/2 cup Carbquik, 1/2 cup corn bran, a dash of liquid Splenda, about a tsp of baking powder, and egg, and 1/2 cream/water mix. Dash of salt. Looks like we'll be getting 12 pieces. I tasted a little corner, and it's not bad at all. We're having it for supper with a pot of chili with black soybeans. Mmmmmmm.
