Corn bran?

i made a corn muffin with one tbsp of the mags cereal mix, two tbspns of the carbsense cornmuffin mix, one egg... and some water,, shredded a bit of pepperjack in it..
didnt have the texture of a corn muffin, but it had a corn TASTE and thats all i really needed!
yum!

i just bought some carbquik... might mix THAT with it next time..

Kim, I use Atkins Corn Muffin Mix to bread stuff - like catfish - I mix it half and half with Carbquik, dip the fish into beaten eggwhite then dredge in the mixture, and fry it up in a pan with about 1/2" of fat. The Carbsense corn muffin mix is a LITTLE sweeter than the Atkins but it would work that way too. I've also done fried chicken with that same combo.

THEN I take the leftover mixture, add an egg and a bit of chopped green onion or jalapeno, some cheese sometimes, and enough cream to make it a thick batter - drop THAT by spoonfuls into the hot grease and have me some fritters with my fried catfish. Talk about feeling like you're really cheating!

I do have some corn bran so may try that instead of the mixes - combined with a little CQ and then fry me up something tasty.

Anybody try the tamales yet??

I tried tamales, and it's back to the drawing board.

I bought a tamale kit, and used the corn bran for the masa; however, the texture just isn't right, it's too soft and gooey. I think it would be better if it were mixed with some vital wheat gluten. I used 1/4 of the kit; couldn't see making 5 dozen in an experiment. I ended up making 15. The taste was ok, not quite the same as real tamales. They smelled wonderful cooking, but the end result was somewhat disappointing. So far I like the corn bran best making a quick cornmeal muffin.

Next time I might try making corn chips, when I have more time to experiment.
