Has anybody tried corn bran? I found it at honeyvillegrain.com, it has 23 gms carbs, 17 g fiber, so 6 g net for 28 gms of product. They claim it gives a corn flavor to muffins, etc. There are 81 servings in a 5 lb bag.

If anyone has tried it, I'd like to hear from you. By the way, just how much is 28 grams? I've looked at conversion charts, and 1 cup of regular flour is 110 gms, so 1/4 flour is app. 28 gms. The same chart shows an ounce of corn flour at
2 1/2 TBS. Another chart shows 28 gms at 9.38 fl. oz. ??????????????

It's just under an ounce. Not sure what the volume would be on an ounce of weighed product. I e-mailed them to find out the measured volume of 28 grams of product.

They responded VERY quickly. 28 grams (1 serving) is roughly 1/4 cup of product. This sounds like it would be a good replacement for the corn meal in the CarbQuik Cornbread recipe on the carbalose site.

Now I'm wondering if I can somehow adapt a tamale recipe to utilize this stuff instead of masa!

Thanks, Katie. That's what I figured, but I'm sorta math challenged.

I might just buy some and try some cornbread, or maybe a one-minute corn muffin. I'm drooling already. Tamales sound marvelous. That's my absolutely favorite Mexican food, and I can't eat them on lc! Let's see what texture it is, and if it can be substituted for masa. I'm going to look at the site maybe later tonight or tomorrow, because I might buy some of their dried strawberries and blueberries, too.

I love this stuff. In and of itself, I suspect it's like dust sweepings from some corn meal mill. LOL!

Still it's high in fiber and has a slight hint of corn flavor. I use it in my "can't tell them from the real thing" corn muffins.

Dry Ingredients:
1 cup Wheat Protein Isolate (Arise 5000 type) *
1/2 cup flax meal
3/4 cup corn bran
1/2 cup almond flour
2 TB corn meal **
4 tsp. baking powder
1/2 tsp salt

Wet Ingredients:
6 TB melted butter
3 eggs
Enough water to bring total liquids to 2 1/2 cups
Sweetener equivalent to a generous 1 cup of sugar ***
2 drops yellow food coloring

Preheat oven to 375 & spray your muffin tins, unless you're using silicone, which doesn't require it. Mix all dry ingredients well.

Then, what I do is: Melt the butter in a big pyrex measuring cup. Mix in the eggs, sweetener and water and blend well. Dump the "wet" into the "dry" and stir with a big spoon until just mixed. Don't over mix.

I generally get sixteen of these and they are a decent size when baked.

Bake for about 20 minutes, till they're just starting to get golden.

For 16 muffins, it is:
Calories 124
Fat 10
Sat fat 4
Carbs 6
Fiber 3.5
Protein 6

Net carbs 2.5 each

* You can use carbquick instead of WPI. If so, decrease the baking powder to 3 1/2 tsp.

** yes. regular old corn meal. When used in this amount it is perfectly acceptable and has pretty much no impact on BGL.

*** I use liquid splenda. If you use regular splenda, add about 1.5 carbs to each muffin.

Don't forget the food coloring. Presentation is half the issue with eating.

Thanks Maggie! It sounds like it might work if I mixed it with some CarbQuik to make the mixture for the outside of tamales. I'll get some when I can and see what I can come up with

Wow, Susie! I didn't even think about corn dogs! My DH and DS both love them, and I bet they would be in heaven if I could figure that out!

I've made corn dogs using the Atkins Corn Muffin Mix - I'll have to dig up my "recipe" - you just don't add as much liquid, as I recall, then kind of roll/pat it around the dog, then deep-fry...OMG they are SOOOO good!

I got the corn bran today. A big 5 lb bag. It smells like corn. I made a 1-minute muffin with 2 tbs flaxseed meal and 2 tbs corn bran. (1/4 cup has 6 net grams, 23 carbs minus 17, yes, 17 grams fiber) I added just a touch of liquid Splenda, and cooked it up, split it, put on some butter, and ------- It is marvelous! Tastes a lot like cornbread. Has a nice corn taste. So I'm getting just 3 net carbs for the corn bran, and 7 1/2 grams of fiber. 2 Tbs of flaxseed meal has 2 gms fiber, so almost 10 gms of fiber in one little muffin. It seems to be a little on the dry side, compared to the muffin made with all flaxseed meal. But, in my book, it is completely acceptable, especially to eat with a bowl of lc chili.

As I experiment, I will post more recipes.

The answer is that I've never had a corn dog in my life.

So, I'm hopeful the more learned folks here will come up with an answer.

i would love to have a corn muffin... dont think i would trust myself around a whole BATCH but by doing the ONE MINUTE MUFFIN it would be just TOTALLY perfect..
