| Angie, I remembered that someone here posted a recipe for bbq'd pulled pork a few weeks ago. Here is a link to the thread where the recipe is located. http://www.lowcarbeating.com/bb/show...ht=pulled+pork Also, if you do a search of this forum for "pulled pork", you will find several threads where it is mentioned. There might be something there more to your liking.

| I do mine the easy way - I buy a boneless pork shoulder and put it in the crockpot (I have an 8 quart oval so it fits in there easily), add a chopped or sliced onion and a bottle of LC beer, and let it cook until tender enough to pull apart. Then I let it cool enough to handle, and using a couple forks or your hands, pull all the meat apart, discarding any big lumps of fat or gristle. Then I just bag and freeze it in serving portions. When I want pulled pork, I take out a bag and nuke it then add LC BBQ sauce (I like my own homemade best, I'm pretty sure the recipe is on here but can repost if you want it) and eat it with coleslaw or just shredded cabbage. | I TOTALLY agree with Char. Simple is best and yeilds great results which work for many different flavor combos. Here's what I do... Take several packages of pork country ribs (boneless preferred, they're just easier to deal with) and throw them into your biggest pan. Cover with a lid and set the temp to med-low. Cook until they are falling apart. Rotate the pieces every 15-20 minutes so they all cook/fry evenly. Time depends on lots of things. Usually takes 2-3 hours. Done! What happens is they first steam (as the extra moisture escapes the flesh) and then after that has all evaporated out and the lard is released, they begin to "fry" in their own fat. Add BBQ sauce or use as carnitas with guac, salsa, sour cream, etc. You can also use this as your "meat" for breakfast scrambled with some eggs.

It is a boneless loin roast aslo said "Chefs top choice" i asked the butcher for the best choice. I asked the butcher for the best cut for a pulled pork.. they acted like they didnt even know what i was talking about... makes me feel comfortable.

1/3 cup ground flax seed (or a mix of flax and almond or flax and soyPI) 1/4 tsp baking powder 1 egg (a small egg is good) salt and pepper, a touch of savory seasoning (lately I favor Mrs. Dash Garlic and Herb). Mix well and cook in a round, flat ramekin* - about 1 minute (more or less) in the microwave. or any smallish flat microwaveable dish - some of the little corning ware dishes work quite nicely - and you can pick them up at Goodwill for next to nothing.

| I buy those really cheap pork shoulder roasts when they go on sale. I throw it in my crock pot with about 1/2 cup of water some garlic powder, salt, and pepper and let it cook for about 8-10 hours on low. It will literally fall apart when you take it out. If you want that smoked pork flavor, then pour in about a tablespoon of liquid smoke before you cook it. Kraft has LC bbq sauce, that is 3 carbs per serving. I find it at my local Walmart.
