I took my mother's recipe for Stuffed Zucchini and low-carbed it. Here's what I did. All carb amounts in parenthesis are net carbs
Mom's Stuffed Zucchini
3 medium zucchini (4.5 net carbs each)
1 small onion, finely diced (6)
1/4 green pepper, finely diced (.5)
1/4 red pepper, finely diced (.5)
1/2 tsp. garlic powder (1)
1 tbsp. olive oil (0)
1/2 pound hamburger (0)
1/2 cup crushed pork rinds (0)
1/2 cup shredded cheddar cheese (1)
salt and pepper to taste
1/4 cup tomato sauce (4)
Preheat oven to 350 degrees. Wash zucchini, trim ends, and cut in half lengthwise. Boil in a small amount of water for 10 minutes (or steam for approximately 15 minutes) untill partially cooked. Drain. Scoop out centers of zucchini halves and dice; set aside. In a medium skillet, heat olive oil. Add onion, peppers, and garlic powder and saute until slightly browned. Add hamburger and brown. Remove from heat. Add reserved diced zucchini, cheese, pork rinds, and salt and pepper and mix. Fill squash shells with hamburger mixture. Place shells in a 13x9 baking pan and sprinkle with additional pork rind crumbs and cheese. Drizzle tomato sauce over top of zucchini and around edges. Bake at 350 for 30 minutes.
By my calculations, the entire recipe contains 26.5 grams of carbohydrates, which figures out to be 4.4 grams per zucchini shell. These are quite filling, so two should be enough for an entire meal (ya got your veggies AND your meat in there!), so this would serve 3.
