| I am probably in the minority as I am yet to try the OMM. That is particularly surprising to me since I used to devour baskets of bread at restaurants before starting this WOE. However, as I have not had any cravings for bread, or bread-like things since I started, such l/c things have not been particularly high on my list of things to try. That being said, after reviewing this thread, it occurs to me that the OMM may give me an inexpensive vehicle to test an idea I have had for a long time to make a l/c german apple cake. Instead of using apples, I have thought about using slices of jicama (1.25 net carbs per 1/4th cup), flavored with Davinci green apple syrup. To test the "apple" part of my hypothesis, I will use between 1/8th and 1/4 cup (I will have to see how much the batter will hold before I decide) of diced jicama mixed with 1 Tbls Davinci green apple syrup and then added to the OMM mix with some cinnamon and perhaps a touch of allspice. I will let you know how it comes out.

| Henry, I have used zucchini without the seeds and made faux pineapple; it would probably work with apple, too. You might try the Atkins apple drink mix, if you want a sweeter apple flavor. Jicama would be a good choice, too. I saw Giada DiLaurentiis make a spicy cornbread, so I thought I might try it with the OMM corn muffin. She put chili powder and sundried tomatoes in it. I make the corn muffin with 1/2 flaxseed and 1/2 corn bran. The spicy sounds really yummy. |

| Nita, that is a great suggestion. Zucchini would solve the texture problem that I anticipate I would have to deal with using jicama. It would also be easy to approximate the shape of apple slices. The only concern I can think of is the water content of the zucchini might require some tinkering with the recipe to accomodate it.

| Henry, maybe simmer the zucchini for a bit in the apple syrup, then drain before adding to the muffin. You might also consider almond meal to make a cakier texture. I actually made zucchini apples with the Atkins apple drink mix, and they tasted surprisingly like apples. I think I thickened them with a little xanthan gum thickener. We probably had them on lc vanilla ice cream; however, we have gotten away from the ice cream. Portion control is really hard for us with ice cream! Anyway, I liked the zucchini better with the Atkins drink mix than with the DaVinci green apple syrup. |

| Nita, I may not have any choice. The Atkins web site does not list the apple drink mix in its available products. I know they dropped a lot of products in their reorganization in bankruptcy. The drink mix appears to be one that was dropped.

| I have a mock apple crisp recipe where you buy a largish zucchin, peel, halve lengthwise, scoop out the seeds, and then slice crosswise. They actually LOOK like apple slices that way! I think simmering a bit in the DaVinci syrup would make them convincingly apple-like, whether sliced or diced, for the muffin. OK, OK, I've resisted making this muffin so far but I can see I'm gonna be arm-twisted into it here! ;-) Char

| while we're armtwisting... there is this MONKEY thread...*whistling to myself*... i just shred the tiny zucchini i got today.. it was about an inch across and five inches long... and it only shredded to about a fourth a cup of stuff (no i did NOT measure it ..) but i STILL dont know how much to put in a muffin..maybe it ALL? |

| Okay......... FINALLY cooked up some minute muffins...... made three out of the recipe instead of ONE..... or maybe TWO..... added an extra egg and did Eddie's fav..... chocolate and peanut butter. Smelled wonderful...... but didn't partake tonight...... saving them for breakfasts the next THREE days.... yes.... ONLY one PER day |

| HMMMMM let me know how it IS in the morning or after a day or two ronnie... i think mine dried out alot after even a few hours.. (course i didnt wrap it really well either *L* i have some zucchini shredded and ready to try later,, and then i will get the muffin AND veggies.. |

| Rhonda, let us know how they hold up or reheat..whatever. I like the choc/pnutbtr. Make a lemon OMM tonight and added extra flax meal. Cooked it a bit longer, had a very firm texture. Used lemon extract, it was ok but the flavor wasn't strong enough. I used 1 tsp. extract. |

| Kim, let me know how the zucchini muffin comes out. I was thinking about shredding the zucchini, then steaming it for a few minutes, and letting it drain real good, so it's already partially cooked, since the muffin cooks for just a minute. I made a corn muffin tonight, with chopped sun dried tomatoes, chopped pepperoni, and shredded cheese. I did one, and the middle was a little undercooked, so I made a hole in the middle of the second one. It was good. Hubby liked it very much. |

| sus! lemon sounds good..or orange! nita.. i didnt cook it at ALL, i just shredded in my little cheese shredder thingy..(highly technical term)...it was a pretty fine shred.. then i put it in the fridge till i was ready.. squeezed out the zucchini (clean hands! ) and dumped it raw into the mix.. it was fine, no zucchini taste, but a little more texture.. only thing was i think i should have added more spice to it... nice way of gettin in a veggie eh? |
