Ok, that makes a bit more sense then, thank you I just couldn't understand all the hub-bub about a pancake (although now, I'd sort of like one darn it! )

Trina and Kim: Thanks for the info re: dry muffins. But, I'd still like to know how much spice you all put into the muffins....1 tsp, 2 tsp? Thanks

gosh donna.. im not really sure... maybe a tablespoon?

cher, mmmmmmm croutons sound yummy... let me know if that works..
someone has a recipe for biscotti...ive never tried it..

i used to make FLAXSEED CRACKERS when i first found flaxseed..
grind it up... add spices (chipotle, cayenne, chili powder ..that sort of thing.. saltnpeppa.. garlic.. ya know.. what ya like)
add some spoons of water till its a thick paste..
spread out on a pan... bake in the oven (dont ask! i have no clue what the temp was..its been FOREVER since i made em..)
when they set up ,i slice it and turn it over and bake longer..

take out.. they dry out even crisper..
very yummmmmmy and crunchy

maybe i should look up the actual recipe again...

Eddie,
I'll bet if you made Maggie's biscotti recipe without the sweetener and chocolate, and maybe added garlic powder and parmesan cheese, baked it in the little loaf for the first baking, and then sliced it, sliced it again into little cubes, and then did the second baking....it would be very much like a crouton.
I'm thinking Caesar salad....on soup...Mmmmmm......

FYI...I posted a recipe for a zucchini OMM in my journal, here: http://www.lowcarbeating.com/bb/show...&postcount=108

I thought it needed a bit more spice, but tastes may vary...

Well duh, that makes sense. If you can do a muffin as savory or sweet, why not other recipes and make them fit your needs? Trina, I'll bet that will work. I do miss croutons sometimes . . .

Ooh, I did a good thing today.

I had a protein shake mix that was supposed to taste like vanilla, but had a fake-banana off taste that I really hated. (Syntrax Essence, the vanilla flavor.) Today I put a scoop of that into my OMM, a bit of cinnamon, a splacs of Davinci Gingerbread flavor, and voila, a mild, subtle banana cake flavor.

I loathe fake banana taste and would never make one full-strength or buy banana flavoring, but the little bit that ruined the shake mix for me totally made this muffin delicious.

I was thinking these muffins (savory version) could be useful in so many places: in meatballs or meatloaf, in turkey stuffing, maybe this could be the crouton for French onion soup!

The possibilities are endless, especially with all these brains storming.

Robin, I think that's a VERY good sign you didn't know what a McGriddle was. Pat yerself on the back for that one!!!!!!!

I didn't know what a McGriddle was, either. I haven't been in McDonald's except for coffee on the road in years.

I am eating a corn muffin, made with half flax and half corn bran, and I poked some pieces of Nathan's hot dogs into it. The taste is good, but with the pieces of hot dogs in it, it didn't cook through. I cut the dogs into quarters. Next time I'll slice them in little slices, and perhaps make the muffin in a bigger container. I'm still experimenting with this little baby.

Hi Nita, you could also try napping the dogs in the microwave first just for a couple of seconds to get them started.
