| I actually have a muffin question, is there a way to make the recipe so that I can cook a bunch of them in a muffin pan, then I'd have some for the week, (I'd be able to take them to work that way)

| The chat about cinnamon apple muffins stuck with me - so had to try them this morning. They came out pretty good. For some reason, when I eat zucchini, I end up with a terrible stomach ache, so I did not include them. I used the regular ingredients, plus a few tbs of sf apple cider, and added some cinnamon. I could smell the apple cider when I took it out of the microwave. Will definitely have this again. :fork:

| sugar free apple cider? If it's regular cider without added sugar, that's going to really jump up the carb count. One ounce of apple cider is probably 6 to 7 g. net carbs. It's probably fine if it's a sugar free, apple cider flavored syrup, though... like those from Da Vinci or Torani.

| If I'm not mistaken, I think Angie meant the sugar-free apple cider mix (did you, Angie?) I have some of that; I make mock apple crisp with it. (Basically, you cook slices of zucchini in the sf apple cider mix and water, place in buttered pan and top with a crumbly mixture of almond flour, Splenda, cinnamon and butter. Bake until bubbly. It came out pretty good. I have the recipe somewhere; I'll look for it. This would work for muffins, too, I bet. Adding shredded zucchini and some of the powdered cider mix to the muffin batter would make a good "apple" muffin.

| Last week I mused in this thread about using the OMM as a vehicle to try out a faux apple idea using jiciama that I had been thinking about. Nita suggested using zucchini cooked in Atkins apple juice as a substitute for the apples. I was not able to find any Atkins apple juice. However, last weekend I did find some sugarfree apple cider mix and decided to "wing" a batch of "apple" crisp to see how it worked. I cooked 1/4" slices of the zucchini (peeled with the seeds removed) in the apple cider with a stick of cinnamon, a handfull of unsweetened dried cranberries, brown sugar flavored splenda syrup and Davinici green apple syrup. Then added some ground cinnamon, fresh grated nutmeg, and 1/4 cup sugar equivalent of liquid splenda before thickening with xanthan. I was not particularly pleased with the topping on the apple crisp. However, the filling was exquisite. It reminded me of canned apple pie filling redolent with the flavors of brown sugar, cinnamon and nutmeg. If I ever figure out a decent l/c pastry crust I will use the filling to make an "apple" pie. Besides having it on Maggie's cereal, I think that I will also make an apple danish with it, if I can find the danish recipe I copied a long time ago. I decided that it tasted so good I would call the product "zapples". Now, back to the OMM. I made my first OMM last night. I added 2 Tbls of pecan meal to the flaxseed, some cinnamon, allspice, and grated nutmeg, and a heaping tablespoon of Zapples that I chopped up and 1 Tbls brown sugar flavored splenda syrup. It made a wonderful apple spice muffin.

| if ritz crackers could make a MOCK apple pie back in the day... i am not surprised that you guys came up with a mock apple for the LC eaters... thanks as always for the ideas henry! |
