What a bummer that we can't get Atkins Morning Start drink mixes anymore. The apple was great. You could make it cold or hot, and it made fantastic mock apples, just like Henry described. It makes no sense for them to quit making products that were so good.

Back to the OMM. I mixed up a muffin with flaxseed and added a couple of tablespoons of unsweetened shredded coconut, and then fried it into pancakes, made 5 nice little pancakes that were so good! Yummy.

I know Nita, what's up with Atkins stuff just disappearing. Those "nutritionists" there are messing everything up!!!!! Pineapple upsidedown cake...............DH would LOVE that!!!!! If DelMOnte comes out with a low carb canned pineapple, I might try this with my Atkins bake mix cake.

i HAVE the pineapple da vinci syrup! actually i have HAD it since i asked barb how to make SWEET AND SOUR sauce a zillion years ago..(oh hash up! like YOU dont exaggerate from time to time... okay! fine! so i do it with each breath i take.... ENOUGH ALREADY!! *L*)

where was i?


oh... so i bought it.. and then realized that barb didnt USE pineapple in the sweet and sour sauce..*L*

so its still sitting there...

barb, do ya think you could just cut FRESH pineapple up and use THAT? no syrup or added sugar THAT way
god doesnt add sugar to stuff..*L*

I, myself, wouldn't be afraid to use fresh pineapple. But I am to the point where I'm comfortable with where my weight is at, so I indulge in real fruit once in awhile. It's a YMMV thing. AND if I DO have something like that, I make sure I get a little more exercise in. DH would SOOOOOOOOOOOo love it if I made a P-U cake. (not that it would stink or anything LOL)

Better than jicama, better than zucchini in terms of imitating apples:CHAYOTE.

You have to cook it rather longer than apples, I usually parboil the slices. But the final product is dynamite. I bet if you put some of that apple cider flavor stuff in the boiling water, it'd get in there really nicely.

Kim, fresh pineapple has 19.58 carbs per cup of diced pineapple with 2.2 grams of fiber ( according to the USDA Nutrient Database). 1 slice, 3 and 1/2 inches in diameter and 1/2 inch thich is also listed as having 7.07 carbs with 0.8 grams of fiber.

Kim, chayote is listed in the USDA database as having 5.15 carbs per cup of 1 inch pieces with 2.2 grams of fiber.

Binki, I had forgotten about Chayote!!! THAT's the Ticket!!!! It's a squash, so it will soften better than jicama. But it holds together a little better than zucchini. I forgot that I LIKE it!!! Thanks for reminding me!!!!

Chai-O-tay or Cho-YO-tay. Pronounce the "ch".....if you give it a "k" sound it will definitely sound like you want a relative of the wolf!!!!! Then they WOULD think you're crazy. If THEY don't kow what you are talking about, you could describe it as a pear sized and shaped squash, light green and a bit wrinkled. (Kinda like a Sharpay [sp?] dog.)

Today I ground up some coconut in the chopper/grater attachment to my stick blender, and made coconut flour. I used it for a OMM, and it rose nicely, like a little cake. Actually, it was like eating a nice little coconut cake. I used the coconut oil, too. I got an e-mail from netrition that they had coconut flour for sale, but I have tons of unsweetened coconut, so I tried this, and it worked beautifully. Now I have a new dessert. This would be great topped with sweetened berries and whipped cream.

Oh goody, goody, goody!!!! I have some unsweetened coconut too and coconut milk, AND coconut s/f syrup. I think I'll try a variation of this Nita. THANKS!!!! (can you tell I like coconut????)
