Oh my goodness...I just made my OMM using maggie's cereal. Sweetened it with SF almond syrup and added cocoa to make it chocolate. I cut it like a layer cake and "frosted" the middle with a mixture of cream cheese and almond butter sweetened with a lil SF syrup....Oh my, my, my...that's the best thing I've eaten for breakfast in a long time!!!

Oh, wow. I finally found some milled flaxseed and picked up a bit of baking powder and gave the OMM a try. I know it's nothing new to you gals (and guys) but ... wow! Soooooo yummy! Just had to post a quick note to say "yea!" and "thanks!" for keeping this thread so prominent. Otherwise, I might've gone many years without knowing about this amazing treat.

I tried flaxseed a couple years ago and *hated* it. Today, I made the muffin mix sans sweetener and tasted it just to see what my reaction was now. Ugh. Yuk. I still hate flaxseed, I think. Nevertheless, I plunged ahead and dumped in a tablespoon of Torani's sf vanilla (which tastes like cake batter to me!), a couple drops of liquid sucralose to make certain it was sweet enough, and a dash of cinnamon.

I was amazed at how HUGE it was, rising right out of my teacup. After it cooled briefly, I sliced it into five slices and buttered it lightly. Heaven. Sheer heaven! This is my new breakfast, snack, etc.

Can't wait to try all the nifty variations listed in this thread. Woohoo!!

You guys/gals rule! Low-carbing is so insanely easy with things like this... (I pity folks who only read the books, but never visit the boards to learn such wonderful tricks.)

I bought some hemp seeds from netrition and have been adding them to the OMM. They have a moist, nutty flavor, and 2 tbs have only 1 net carb. They really give it a nice flavor. I made one this morning and added a few frozen blueberries - oh, so good!

I added frozen blackberries to mine this morning. In addition to some sf vanilla DV, I also added a little bit of liquid splenda to help offset the tart of the berries - yummy! I was worried the frozen berries would contribute too much liquid but they did just fine. It also does well with fresh blueberries and raspberries.

my new fav dessert:

Mocha Almond Fudge OMM w/ Chocolate Buttercream Frosting

i made the muffin w/ 1/2 flaxmeal and 1/2 atkins cappucino flavored shake mix. added some cocoa powder and some kahlua davincis and some sliced almonds as well as the b.p. and splenda

frosting is simple, just melt 1 sq. unsweetened choc., add a pat of butter, stir till smooth. add splenda packets to taste and last step is to drizzle in some heavy cream while mixing until frosting is just stiff enough to spread.
o.......m........g!!!!!!!

make sure muffin is cool before frosting so it doesn't melt.

will have to play with sweeteners a little as it took 12 packets to sweeten the choc. enough to take away the bitterness and this made the frosting sweeter than the muffin. wish i could use liquid splenda to sweeten the choc to save on carbs but dont want to seize the choc. maybe add liq. spl. to the cream first? one sq. of choc makes enough frosting for three muffins though so it's not as bad as it sounds. anyway, still good no matter what.

You can use liquid Splenda, just add it AFTER the cream. I made a lovely chocolate ganache that way and I heated the cream first also, just to make sure it wouldn't seize the melted chocolate. Worked great! I added a dash of vanilla and the liquid Splenda to taste after the cream was incorporated.

just musing here.... what about pouring the drops of liquid splenda onto a saucer and letting the water evaporate? Then scrape the remaining Splenda crystals into your melted chocloate. This is something I've thought about, but I never got around to trying it out.

I'm still loving my new staple; I think I have one of these almost every day now. (I worried it would stall me for no good reason except *looking* like bread ... but my weight loss has actually increased over the last couple weeks. Go figure.)

I tried adding 2 tbsps banana davinci's, a dash of cinnamon and pumpkin pie spice, and about a quarter of an ounce of pecans. Pretty yummy, but the banana flavor wasn't strong enough to *really* give the impression of banana nut bread. Close, but not quite. I wonder if using banana extract/flavoring would work better?

Yesterday, I did a 2 carb German Chocolate muffin by adding a tablespoon of unsweetened coconut, half a teaspoon of cocoa, and sweetening with 2 tbsps of davinci's German Chocolate syrup. Now THAT's heaven! It needed an extra 20-30 seconds in the microwave, but was so very tasty. Definitely a "do over!"

Hmmmm - what to try for today's muffin? Maybe I'll try some pineapple syrup, since folks have been talking about Pineapple Upside Down cake recently. (And I have the syrup - which I use with coconut syrup to make "pina colada" flavored Italian sodas!) Or maybe more coconut ... with coconut oil, unsweetened coconut, and coconut syrup? Decisions, decisions!!

I used flaxseed meal and pecan meal, flavored with ginger, cinnamon, ground clove, and nutmeg and sweetened with ginger and molasses flavored splenda syrups to make a very tasty gingerbread OMM.
