| I just made a muffin with 2 TBS hazelnut meal and 2 TBS unsweetened coconut, fine shred, with a little vanilla. It made a wonderfully light and sweet little cake. Very good. No flaxseed meal in this one. |

| QueenMama is my Mama! Hi, Mom! I am not new to low-carb, but I have just recently gotten serious about losing weight. I LOVE the 1 minute muffin! There are so many different ways you can change it up! I have done sweet & savory--my fave is still the chocolate "cake" muffin! Yes, I am a chocoholic (like my mom!). This is a great way to satisfy my cravings! |

| Soooo, my little girl is also a muffin freak! Yeah, I gave her the recipe, and she's run with it! And, of course, our fave is chocolate! I made one with some lc biscuit mix (Carb Sense, now longer available) and we used it for a bun for a hamburger. Great stuff. |

| This morning I did it half flax & half carbquick. I cut the baking powder in half, since the carb quick has some and forgot the butter entirely. Then I sweetened it with DaVinci lemon syrup (first really acceptable use I've found for it ) and dumped in a bunch of poppy seeds. When it was done & cooled, I cut it in half and frosted both halves with a couple of TB's of sour cream, sweetened with liquid splenda and two drops of lemon extract. (If I hadn't been out of cream cheese, I'd have used that, thinned a bit with real lemon juice.)It was delightful.

| OMG OMG OMG! Okay, so I made this muffin a week ago or so, forgot about the butter, too much baking soda and made it not sweet because I wanted to eat it with soup. Well, it was okay but not fantastic. Today I had a sweettooth and decided to give it another try. I tripled the standard recipe, used organic coconut oil, the right amount of baking powder this time , stevia (12 drops of NOW brand stevia glycerite) and about a tablespoon of erythritol ( I dont like to use AS and also just dont like the taste of splenda), some lemon flavoring. Put it in a muffin tin ( three tablespoons of the mix per cup) and popped it in a 350 degree oven ( I dont use a microwave) for 20 minutes. it is FANTASTIC. ....like you all have been raving...it is sooooo gooooood I am allergic to gluten and so already kind of used to crappy bread type things but this is so good. I am going to try bread with this for sandwiches too. Oo---ooo and brownies So, now...does this make people stall ( I think I read that somewhere about flax seed crackers?) It is also totally filling, I had one (so that is half of a regualr recipe ) and i am full... Wow...thanks again who ever came up with this and all you guys coming up with the variations!

| cavegrrl - i decided to try erythritol in my OMM this morning and was very pleased with the result. I was out of stevia so i used about 1/2 tsp of splenda as the second sweetener. Much better texture and taste than when i make it with just splenda. |

| And just now I made a OMM with cheese to go with dinner tonight and I have to say: YUM! and DH second that triple recipe, 6 small muffins 3 T coconut oil, 3 eggs, 3/4 cup flax seed meal, 1/2 t baking powder, pinch of sea salt, two small handfulls of shredded cheddar plus a little for on top of each muffin. Mix the whole thing to gether, put in muffin tin, top each with some cheese and plop in the oven for 15-20 minutes at 350 or 400.

| And, just *now* I made OMM pancakes...also great: 3 eggs, 1 cup of flaxseed meal, some erythritol, enough crema with water to make a good batter ( about 1/4 cup) some salt,some vanilla, some baking powder, some cinnamon. Fry in butter, topped with whipped cream and strawberries..some bacon...every one (kids, non-lc hubby and I ) loved it

| Cavegrrl, I've made the OMM into pancakes, too, and they are fantastic. Try them with almond meal, or use fine unsweetened coconut, instead of the flaxseed meal, or mixed with it. It makes a tender pancake, and all it needs is some butter, maybe some fruit or sugarfree fruit spread. And a dollop of sour cream, too. |

| I have been experimenting with a corn muffin using corn bran and flaxseed meal. I have tried various amounts and combinations of butter, corn bran, flaxseed meal, liquid, and even some vegetable glycerine (for its hydroscopic properties). I use a 4" round container to cook the muffin. My first attempt using the base OMM recipe was inedible. The next 2 were only marginally better as I increased the butter and liquid in each. I suspect that using corn bran you need to use more fat and liquid to have a muffin that is not too dry. This is the recipe that I now use which produces a moist muffin with a nice flavor. Please note that this is not corn bread, but it does have a nice corn flavor. 2 Tbls flaxseed meal 4 Tbls corn bran 1/4 t baking powder 2 Tbls butter 2 Tbls water 1 egg 1 Tbls sugar equivalent of liquid splenda Melt butter, add water and egg. beat egg and add liquid splenda. Combine dry ingredients and stir into the wet ingredients and microwave until done. (1 minute in my microwave.)
